Success!

So I woke up this morning and made some oatmeal, and I loved it!!!!  I’m so excited to say that I actually had oatmeal and really enjoyed it.  I put a good amount of stuff in it and I think it made all the difference.   Thanks for all the great suggestions, I’ll be sure to pick up some other mix-ins on my weekly shopping trip tomorrow!

In my oats I had cinnamon, vanilla extract, 1/2 a banana, blueberries and of course pb.

I think the difference is I put a full 2 tbsp of pb in it where as before I used tbsp.  Definitely a big difference.

How appropriate that at the bottom there was a heart.  I know why you all love it so much know this kept me full for hours!  Can’t wait to keep trying oatmeal new ways.  The cinnamon and vanilla made it taste almost like French toast, and the blueberries were perfect in there.  I ❤ oatmeal!

I went to the gym this afternoon and had a great sweaty session.  I love the weekends the gym is always so empty, wish it was like that on the weeknights.  I’m hoping once it starts getting warmer out I’ll be able to hit the gym or go for runs in the morning.  I just can’t drag myself out of bed when it’s so cold.  I’m envious of those of you who can.

After the gym we hit up Panera.  I had the infamous “You Pick Two.”  I got the Mediterranean veggie sandwich, on whole wheat bread (instead of the tomato basil bread.  I got it without the hummus so I’m sure the 1/2 portion was a little lighter then what the nutrition facts show.  I also got the Low Fat Chicken Tortilla soup.  It was absolutely delicious I was close to licking the bowl.  I didn’t know it came with tortilla strips, they didn’t add much flavor to the soup and I would probably get it without next time.

I saved the whole wheat baguette for later.

My orginal plan for dinner was to make Snobby Joe’s for the first time.  I was dying to try this.  Unfortunately my sister is back in the hospital, this time with pneumonia.  So I wanted to eat something quick so I could get down to the hospital.  I had the remaining 3 meatballs on the baguette  (and one on the side) with 3/4’s of an ounce mozzarella cheese.

I also had a salad with romaine lettuce, a mini green bell pepper, some onion, and light balsamic dressing.

A yummy quick dinner, I hope I get to have the Snobby Joe’s soon though.

Well I’m off to visit my little sister in the hospital, she’ll be spending the night and hopefully home sometime tomorrow.  I hope she gets better quickly, last time she had pneumonia she was in the hospital for a week.  I would be so upset if she had to stay that long again.  Please keep my sister in your thoughts and wish her a speedy recovery, I know she could use some positive energy right now.  And you are all some of the most positive and supportive people I know!

Lazy Friday Night

Oh my gosh I’m so happy it’s the weekend!  We had another round of layoffs today at work.  I knew who was going to be laid off ahead of time so I knew I was safe but it’s hard to see co-workers go.  I had a meeting with my boss’s boss today, he reassured me that I was not going anywhere and that they are actually spending a ton of money to get me some more training next month.  I was also told I will be getting a nice raise next month because right now I’m doing the work of 4 different people who were previously laid off.  I was also told I have to write my own review next month.  Has anyone ever done this?  I have a feeling it’s going to be pretty hard.

This morning I remembered my breakfast and had my usual 0% Fage the last of my peak protein granola, and some dried cranberries.  I don’t know that I’ll ever tire of this combination.

I ate about 1/2 of this baggie.

Lunch today was something I was really excited about.  I had 2 servings of brown rice and 4, 1 ounce meatballs, I made the Monday night.  I was afraid these meatballs weren’t going to taste that good because I had started making them when I realized I didn’t have an egg to mix in.  So I poured a teaspoon of olive oil to bind them and that did the trick.  I baked them in the oven for about 30 minutes at 400 degrees and they came out really moist and delicious,  I definitely didn’t taste a difference without the eggs.

I think I actually liked the meatballs and sauce better over rice then pasta.  Weird.

This held me over until 4 and then I had some grapes.

For dinner tonight we made turkey burgers using the same recipe as last time.

I topped it with a mozzarella string cheese. 

I topped it with some organic ketchup, pickles, and lettuce.

On the side I had some steamed French Cut Green Beans.

I had another serving of the green beans after this.  I love steamed green beans they are so yummy.

I feel like I had a definite lack of veggies today so I’ll be making up for that tomorrow.

Tomorrow morning I plan on making Oatmeal again, do any of you have a favorite combination you think I might like?  I’m going to make myself eat oatmeal until I love it.   I’m kidding of course, but I know how filling, and how good it is for you I definitely think I’m only doing myself a favor by trying it over and over again.

I hope you all have a wonderful Friday night!  Andrew and I were supposed to go out for a friend’s birthday but it was canceled, so we decided to stay in.  I love lazy Friday nights after a long week of work.

Training #2

First of all thank all of you who commented wishing my sister well.  It meant a lot to me and my family to have those nice comments.  You girls are all awesome!

My sister fainted again last night, but today she seems a little bit better.  I hope she shakes this flu fast.  I hate seeing her so miserable.

My pattern seems to be to forget to bring my camera to work on Thursdays.  So I’ll have to hurt your eyes with my incredibly bad pictures from my phone, sorry!!!

I was super forgetful today I completely forgot to bring my breakfast, so I had to improvise with what I had on hand at work.

I did remember to bring 2 clementines so to that I added 15 kashi crackers with the tiniest amount of peanut butter I had left.

It was pretty good even though I know greek yogurt would have been a million times better.

For a snack a couple hours later I had some pistachios.  These are by far my favorite nut.

For lunch I brought a salad with romaine lettuce, spinach, and chicken with my balsamic vinaigrette.

This was really good, but it didn’t do that great of job holding me over, it’s not my usual supersize salad.

So around 3 I had 2 prunes.

Katie asked me last time I had these where I got them.  They are made by Sunsweet and they are called “Sunsweet Ones,”  I’ve found them in my local grocer near all the dates, nuts, and other dried fruit near the produce.  I know they did have them at Costco for a short time as well.  You can buy them on the website and I think that price is very close if not less then what I paid at the store.

After work I came to eat and relax before my second appointment with my trainer. I decided a couple days ago it was time to have a Brinner (breakfast and dinner) again.  I had an egg with 3 pieces or turkey sausage and an Arnold Sandwich Thin.

This was really great and definitely gave me the energy I needed to work out.

Today was mostly  an arms day which is probably my weakest muscle group.  It felt really good to work on them.  I also did a bunch of planks and other ab exercises.  The time flew by and even my trainer told me I was a complete different person this week as compared to last week.  I love the positive feedback, and I especially love that I can feel myself getting stronger day by day. 

Melanie left me a comment yesterday asking me if I felt weak at the gym and suggested I wasn’t getting enough fuel for my workout.  Yesterday was a very weird day for me and I think with all the stress from my sister being in the hospital squashed my appetite.  Melanie was definitely correct though I need to eat enough food to fuel my body for my workouts.

With Melanie’s comment yesterday it made me wonder, am I eating enough, am I eating too much?  It’s been almost a month now and I definitely feel better but I’m wondering if I’m eating the best I can.  I don’t know if I’ve ever made it clear on here before but any advice is welcome!  I’m still learning to listen to my body and to nourish it with whole foods, but if anyone has any suggestions feel free to leave them. 

Well tomorrow is Friday!  I’m so excited.  Andrew and I decided the other day we wanted to have a superbowl party, any suggestions for some healthy game day eats?

Hump Day in the Hospital

Happy Wednesday, the weeks more then 1/2 over.  Thank God it’s been one thing after another all week and I’ll be happy when it’s over.   I want to thank everyone who commented yesterday with ideas on how to combat those days where you are just feel hungry alllllll day.  Thanks for the tips!

I woke up this morning to a blanket of snow, Andrew had a snow day from school, I was so jealous, but they didn’t wind up plowing our road until almost 9.  I asked Andrew to drive me in because I’m a complete baby when it comes to driving in the snow.   So I got to work after 10.

Before I left I had a great breakfast of Fage 0% and blueberries.

Delicious combo, I haven’t had blueberries in so long it was a welcome change of pace.

For lunch I had another toasted ww bagel with peanut butter.

I ate about 1/2 of this when I got a text from my mom that said Andrew was coming to pick up her and my sister up to take my sister, Kristin, to the ER.  I couldn’t eat anymore I was so worried.  Kristin had been complaining she didn’t feel good last night and then this morning she fainted.  My mom was really concerned because my sister has only fainted one other time, she hadn’t been hungry, she had a terrible cough, and she didn’t seem right once she came to after passing out.  I felt so bad knowing my little sister was at the hospital and since Andrew was taking her I had no way to get there.  I felt helpless.  Luckily once my boss came back from lunch I explained to her that I was going to be leaving as soon as Andrew could come to get me.  She offered to drive me to the hospital so I wouldn’t chew all my nails off waiting to find out what was going on.

I know Kristin  hates hospitals, and I was worried it was pneumonia or something worse and she’d have to stay awhile.  But luckily once my boss dropped me off they were already running tests on her and it turned out she just had the flu.  I was so thankful, that it wasn’t anything too serious.  I was happy I had gotten there in time for her to get her blood work so I was able to be there to hold her hand.  She’s home now after the felt she was hydrated enough from the IV.  

Once we were able to leave we went back to my parents house to change into our gym clothes.  While I was there I ate the gala apple you see in the background from my lunch.

The gym was pretty much just okay today.  Not my best day but not my worst.  I was so hungry at this point I think my body needed some serious fuel and that apple just wasn’t enough.

Once we got back to the apartment we made something fast and easy.  Chicken Quesadillas.  (Pronounced like the grandma from Napoleon Dynamite does “Make yourself a dang ques-a-dilla!”)

Mine included mexican blend cheese, 4 ounces of chicken, peppers and onions.  With some salsa for dipping.

It definitely hit the spot after such a long day. I’m so ready for bed, sorry I didn’t get to comment any of your lovely blogs today, I’ll try to do some catching up now but then it’s bed time for serious.

Bottomless Pit

My goodness I have been so hungry all day!  I know days like this will happen from time to time, and I hope I get better dealing with those days where all I want to do is eat and eat and eat!

Breakfast this morning was Fage 0% yogurt with granola and cranberries.

So good, although Chobani is definitely my favorite this is not far behind.   I love the tart cranberries mixed into the yogurt.  One of my favorite combinations.

My hunger attacks didn’t start until later in the day so this held me over until lunch.

Lunch was a pb and banana sandwich on an Arnold Sandwich Thin.

That’s what my stomach became a bottomless pit.

At 3 I ate peanuts.

I made it home for dinner without gnawing off my arm somehow.

For dinner I made a stir fry.

It contained

  • a green pepper
  • some onion
  • broccoli stalks
  • carrots
  • chicken
  • & brown rice

This held me over for about 10 minutes.

Then I ate about 8 Quaker Oatmeal mini rice cakes.  Then I drank some water.  Then while I was on the phone with my friend Michelle, I mindlessly grabbed a spoon and my jar of peanut butter and took a big spoonful and ate it right out of the jar.  It was heavenly, but so not needed.    I feel satisfied finally!  But seriously that was a lot of eats in just a couple hours.  Sorry there are no pictures of my snacks they were in my mouth faster then any camera could have snapped a pic of them.

So on days like this where I just can’t get enough food, what’s something I can do?  Does anyone have any tips on squishing that feeling, or a snack that almost always knocks out the hunger?

Meal Planning Monday

Wow what a busy day!  Work was very busy, and very frustrating.  I hate being blamed for mistakes on things I’ve never worked on.  It was really no big deal but I let it get to me and it stressed me out.  But Monday is over and hopefully the rest of the week won’t be so bad. 

So let’s get into today’s eats.

Breakfast was a 1/2 a WW bagel with pb and an orange.

Delicious and very filling.  I love pb in the morning it does a great job of holding me over.

Lunch was my left over Roasted Red Pepper and Tomato Soup:

I also had a salad with romaine and spinach and balsamic dressing:

Plain this time.

I ate all the soup, the entire bagel, and 1/2 the salad before I got bored.  I talked to my friend for the remainder of lunch which is a tradition.  We call it our “conference calls”  and on my lunch everyday I talk to her.  It’s a nice break to the day.

Later on I ate the rest of the salad and another delicious kiwi.

During my lunch time today while I was eating I planned out my meals for the whole week, according to what was on sale at the store.  It worked out really well.  So once I got home before heading to the gym I made some of the stuff I could prepare ahead of the time for the week.  It was definitely a good invest of time because the rest of the week is going to be easy at meal times.

As soon as I got home I needed something to eat I grabbed a string cheese.

While cooking I spoke to the same friend from my lunch call.  We can talk for hours a day and we usually do.

I did not know what I wanted to eat, and to be honest I had no food in the house.  So since I had the oven on I made a “baked cheese” sandwich.

I used less then an ounce of more cheese (I wish I had known this is what i was going to do for dinner I would have never had the string cheese.)  And 5 pieces of turkey pepperoni on an Arnold Sandwich Thin.  Wrapped it in tinfoil and threw it in  the oven for about 15 minutes.

After my dinner and phone call I went to the gym.  It was so crowded, and my time on the treadmill was torture today.  I definitely wasn’t able to run like I was yesterday.  But I pushed through and decided to call it quits after the treadmill, no weights for me today.  Oh well, tomorrow will be better I know it!

After the gym I went over to the grocery store and did a big shopping order.  I know I haven’t taken pictures of my groceries since the first time, but I was going to the store a few times a week instead of one big shopping trip.  I’m hoping with the meals already planned out I can avoid the grocery store until next week.

Here is most of the things I got, except for a few that were specifically for Andrew, toothpaste, etc.  Let’s see how many things I forget to list.

Biotin is a supplement I take (in addition to my multivitamin).  After my car accident back in July I got stressed out, I was terrified to drive, super anxious being in a car, and had no idea whether my car would be declared totaled (it was after a month), or if they would find any witnesses to prove that the other woman had ran the red light, because we both claimed we had the right of way.  I also was having nightmares reliving the whole experience.  People that came out of their houses after the accident told Andrew that they were certain that somebody had died by the incredible noise of the crash.  I let the stress eat away at me and after a while I realized I was losing my hair.  All from the stress!  The dermatologist recomennded that I take 3 of these tablets each night.  Here’s a little more information about Biotin:

Biotin is necessary for cell growth, the production of fatty acids, and the metabolism of fats and amino acids. It plays a role in the Citric acid cycle, which is the process by which biochemical energy is generated during aerobic respiration. Biotin not only assists in various metabolic reactions, but also helps to transfer carbon dioxide. Biotin is also helpful in maintaining a steady blood sugar level. Biotin is often recommended for strengthening hair and nails. Consequently, it is found in many cosmetic and health products for the hair and skin.

In addition to my hair growing back, it’s thicker and my nails grow so fast and are super strong now too.  The biotin was buy one get one free at the store so I stocked up.

Sunday Cleanup

Hey everyone!  Hope you had a great weekend.  I can’t believe it’s already over.  I am so ready to get in bed and relax for the coming week.  I know it’s going to be a busy one at work with lots of meetings and deadlines for major projects. 

We had a lot of fun at the party last night.  I talked about Michelle last week and how I’ve known her since I was very little.  I’m very lucky to have lots of close friends from my childhood, my 4 closest girlfriends are girls I’ve known since I was in elementary school.  One of them is Laura, if you enjoy celebrity gossip she has a great blog.  I’ve known her, since I believe, Kindergarten.  Last night the party we went to was for her Fiancé.  I’m very excited for her and I’m actually in her wedding party.  I know it’s going to be so much fun and I can’t wait until next March for the wedding!  

Laura’s wedding is another reason I want to lose weight.  In addition to her wedding next year, I also have my cousin’s wedding in September.   This past July I was in another one of my childhood friend’s wedding.  I had a great time but I know I would have been able to have more fun if I was smaller.  When you’re in a group of 9 girls and you’re all wearing the same thing it’s hard to not judge how you look compared to the others.  It was a hard day for me, but the wedding was so fun I was able to move past my own insecurities and I had a great time.

At the party last night I had a bite of one of Andrew’s mozzarella sticks.  Other then that I stuck to just a couple glasses of water.  I’m really happy I’ve cut back on my alcohol drinking. It’s been really easy so far.  And since I’m allergic to beer my bar tabs can be pretty large since most mixed drinks cost between 5 and 7 bucks.  It’s definitely nice to not wake up with hangovers on the weekend and to be saving money.

Let’s get into today’s eats.

After breakfast it was time to bite the bullet and do some laundry.  It’s been a very long time since I’ve done any.  Since we don’t have a washer and dryer in our apartment I go to my mom’s house to do my laundry.  I’m still a mooch what can I say.  We’re looking to rent a house or move to another apartment next year, and on the top of my list are, laundry hookups in the apartment, and pets need to be allowed there.  I love our apartment now but lugging laundry up and down 3 flights of stairs is a bit of a pain.  Plus I’ve been thinking lately how much I’d love to have a pet and my landlords put in the lease that there were no pets allowed.  We live in an old Victorian house built around 1896 and the landlords live right below us, so there’s no way we could get away with having any pets.  Although we’re thinking we might ask them if we could get something small like a chinchilla, or something similar.  I miss my dog a lot and it would be nice to have some kind of animal here.

While doing my laundry I ate a deep chocolate vitamuffin with pb and a clementine I stole from my parents.

While my second load of laundry was in the dryer Andrew and I went to the gym.  I had another great workout and was really excited because I was able to run a lot longer then ever before.  Nothing that impressive but since I only started running about a week and a 1/2 ago I’ve already seen a great increase in my endurance.  It makes going to the gym so much fun when every time your there you can see and feel a great improvement.

After the gym I went back to my parents and while waiting for my laundry to be done I snacked on some baby carrots, and some dip.

I ate all the carrots and about 1/2 of the dip.  It was a delicious crunchy snack.

After my laundry was finally complete we came home and I cleaned out my whole dresser and reorganized everything.  I still need to organize my closet but that can wait until next weekend.  Next weekend I plan on doing a complete and thorough clean up of the apartment.  And the closet is on the top of my list of things to get done.

For dinner Andrew and I tried something new.  We decided to make ravioli using wonton wrappers.  Mine were stuffed with spinach and fat free ricotta, while Andrew stuffed his with meat.  They came out really good for our first time, although a few of them did burst while boiling.  I ate all the spinach ones I made and a couple of Andrew’s meat ones.  I have to say the ones with meat were absolutely delicious.  The spinach ones were great, but Andrew’s tasted like really great meatballs. He did an awesome job.

A Rushed Post

We’re just finishing getting ready to leave for Staten Island.  But I just wanted to post before we left because I have a feeling it’s going to be another late night.

It was “Southern Style Chunky Peanut Butter Fudge”  It was my first time trying one of these bars and it was really good, I’ll definitely buy them again.  It did a great job of fueling me for my workout with 14 grams of protein. 

I had a really great work out on the gym the 30 minutes on the treadmill quickly passed and I did most of the things I did with my trainer as well as some of the machines.  It was one of those workouts where everything goes well and you feel awesome when you’re done.

Dinner was the last of the eggplant.  I’m sad to see it go, but I’ll be making it again soon since it worked out so well and I got 4 meals out of it.

I had 4 pieces of eggplant with an ounce of part skim mozz cheese.  I also used an Arnold Sandwich Thin to make "garlic bread”.

I think I overestimated my hunger because I didn’t eat more then 1/2 of this soup.  It was really good though and I still have a lot left to eat later.  I liked how it wasn’t a canned soup so it didn’t have that weird tin taste.

After dinner I had a dark chocolate truffle.  It was heavenly.

Friday Night Slacker

Happy Saturday!  Hope you are all enjoying your weekend so far.  After getting home from work last night I had to eat dinner quickly because we were going to go visit one of Andrew’s friends from college with a couple of our other friends.  We wound up not getting home until after midnight and I was fast asleep within 10 minutes of getting home.

Let’s get into yesterday’s eats.

Breakfast was a peach Chobani with granola and cranberries.

Once again this did a great job of holding me over until lunch.

Lunch yesterday was a toasted Thomas WW bagel with pb.  I’ve worked at this office for almost 3 years now and never once used the toaster, this is definitely something I’ll be using more often now.

Around 4 I got hungry so I snacked on an Archer Farms Orange Citrus Fruit Bar.

This was really good!  It tasted really excellent, I have the Tropical flavor as well and it’s just as good.  I bought them when they were on clearance one day and it’s definitely something I’ll be buying again.

Once I got home I made Eggplant Stuffed Green Peppers.

I mixed up the rest of the brown rice, a 1/2 a tbsp of ricotta, 2 pieces of eggplant diced, tomato basil sauce, the top of the green pepper diced.  I put this mixture inside the green pepper and then baked in the oven at 400 degrees for about 15 minutes, I then put 1/2 an ounce of part skim mozz on top.

It was a delicious combination!  I love stuffed peppers, and if I had more time I would have added even more veggies to it.

A close up of the inside.  I can’t wait to continue stuffing peppers in new ways, it’s such an easy meal and it can be really healthy.  Typically I would put ground beef in but I didn’t miss it at all with the eggplant in there.

While we were out last night we went to a microbrewery.  I ordered some sweet potato fries but they were super greasy and obviously deep fried I ate a few and then put them aside.  I also had a bite of Andrew’s burger and a waffle fry of his.  It was a lot of fun but I’m glad we ate before we went because I was not happy with many of the food choices.

I woke up this morning and had another WW bagel toasted but with Light Butter on it.

Yum.  After breakfast I took a nice long bubble bath.  I can’t believe how sore I am today.  Much more sore then yesterday.  Although after my bath I’m feeling really relaxed and less sore.  I’m getting ready to the head to the gym and then come back here for some cleaning.

Tonight we’re going to a friends birthday party up in Staten Island NY.  Should be a good time.  I’ll be posting before then.

Feel The Burn

Before I talk about my first session with a personal trainer lets go over the eats.

For breakfast I switched things up a little and had a Peach Chobani, with a honey crisp apple on the side.

I wasn’t really that hungry so this did a great job of keeping me satisfied until lunch time rolled around.

For lunch I had some of the leftover chicken tacos but in a salad, it contained, romaine, spinach, onions, chicken, and salsa for a dressing.  This was so good!

That little container is from duck sauce or something one night from a while ago while eating at my parents house.  I’ve saved them and I use them for dressings, pb, and mustard for dipping.  Keeps the salad from getting soggy.

With my lunch I also had some grapes.

For a mid-afternoon snack I had Kashi crackers and another orange.

Before I went to the gym I had a Carrot Cake Clif Bar.

So I met with my trainer and he certainly kicked my butt.  He had me doing so much that I never though I’d be able to do.  A couple minutes before the end of my session I started to get dizzy, too much for my body for the first day.  He took me outside to get some fresh air, and that certainly calmed me down.  I felt stupid until he told me that he really pushed me and I didn’t give up on any of the exercises, I did them all really well and he was impressed he never had to correct me or urge me to keep going.  So that made me feel better.  I found out I only had one more exercise to do with him though, and I wished I had pushed through but I didn’t realize how late into the session it was.  I scheduled an appointment for the same time and then attempted to do some cardio.  I didn’t last long before I started to get dizzy again so we left the gym.

After resting we went into Subway and got subs.  I didn’t think I’d be able to eat much because of the way I felt so we got them to go and we took them home to eat.

I got a veggie delight again, lettuce, onions, cucs, green bell peppers, banana peppers, and vinegar, all on the 9-grain wheat bread.

I wound up eating about 2/3 of it but that was it.  Now I’m ready to go to bed!  It was an exhausting but fun day.  I can’t wait to go back to the gym tomorrow to practice all the things we did tonight.  My goal is to next week accomplish everything we did tonight, and whatever else he throws at me without feeling sick.  I’m already feeling sore and I imagine I’ll be even more so tomorrow.  But I love that feeling!
