Whole Foods to the Rescue
I can’t express how happy I am that tomorrow is Friday. This week has really lagged and I’m so excited to have the weekend coming up. I have absolutely no plans for the whole weekend, and I couldn’t be happier. Like most of you, the past month has been full of holiday parties, and family gatherings, but this is my first weekend where I have absolutely no commitments! The only thing on my to-do list is to celebrate our 4 year anniversary on Sunday, but we’re thinking of keeping it pretty low key. I can do (or not do) whatever I want.
Todays eats were all really good and all convenient which is just what I need after such a busy week.
Breakfast was the usual. But good news! This was my last chobani in the fridge (for this week) and I purposely didn’t buy any so I have to come up with something different. I still have no idea what it will be but it’ll be a nice change regardless.
I had 2 prunes on the side and mixed in some Bear Naked Peak Protein Granola . With all the protein and fiber in this meal, it did a great job of holding me over until lunch time.
For lunch I brought a new soup to try, Health Valley Organic Minestrone.
It was good (a little bland) but I would probably buy it again. The can said it was 2 servings but because of my lack of other things for lunch I ate 3/4 of the can.
And of course some fruit.
2 clemintines. I can’t get enough right now, I think with the colds going around the office it’s probably a good thing I’m eating these like crazy.
Now I’m not a big fan of sweets. I don’t like cake (I know, I know I’m weird), I don’t really enjoy cookies, and I generally don’t eat chocolate. But a co-worker had my weakness today. Godiva Dark Chocolate! Dark chocolate is my one sweet vice. Sure I’ll eat cookies on occasion but I’m more of a sucker for fried, salty, and cheesy foods.
My blurry weakness! I savored every tiny bite I took of this. She has a whole box! I’m hoping she won’t be offering me any more in the days to come.
My lunch didn’t stay with me very long I knew I should have bulked it up a little more. But I did have a 100 calorie bag of popcorn that I popped and enjoyed.
It’s a great snack to have on hand if you’re a volume eater.
I had no clue what I wanted fo dinner. This weekend I need to meal plan and shop ahead of time so this doesn’t become a weekly thing. After my chiropractor’s appointment today, Andrew and I were off to Whole Foods to fill up some to-go boxes from the salad bar.
We went to my parents house to eat with them. I told my parents all about the blog last night, and I have to say they were really supportive and excited over the whole thing. So Hi Mom and Dad!!
What a mess! I’m going to try to remember everything that’s in here:
- red onions
- spring mix
- romaine
- cucumbers
- medium hot frest salsa
- baked tofu
- some quina salad but I can’t rememeber which kind I wound up getting
- An edamame and brown rice salad
- a meatball
- a couple pieces or rotissere chicken
- and a mini pita
I’m sure there were other things as well but I can’t remember. This was my first time trying baked tofu. I hated it! I won’t be trying that again anytime soon. I gave it to my dog, who wouldn’t even go near it either.

Super blurry pic. My dog was a rescue and we assume she was abused before we got her because she’s so easily scared. She is terrifed of the flash on cameras, and because she associates the flash with the camera she starts to freak as soon as she sees one. So before I could get a decent picture of her witht he flash turned off, she ran out of the room.
Well I’m off to lay down and read. I hope everyone has a great night, and a fast paced Friday. We’re almost to the weekend!!
Up and Running
Well the Internet that is. I don’t know what the weather is like where you live, but it’s ridiculous here. Yesterday it was freezing rain all day, then turned to rain late last night. This morning it was pouring, then it was back to freezing rain around 1, and now it’s like 45 to 50 degrees out. All this change in weather and pressure is giving me a terrible sinus headache. With this headache I’m going to finish up here and then crawl into bed. Does anyone else get terrible sinus headaches? Believe me I’m happy that it’s warmer out, but I wish the temperature wouldn’t fluctuate so much in one day!
Since I was able to post at work today all I have to update you on is my snack and dinner.
My snack was prunes. Okay I get a lot of slack from co-workers and friends for eating these. People constantly ask me if I’m 80 when I leave them on my desk. If only they knew how tasty they were.
X 2. I was still hungry after these 2, and when I looked at the serving size on the container it was 4. I love the ones individually wrapped so much juicier, although definitely a little more expensive, it’s one of those things that are worth the extra money.
Dinner was a new concoction for me. I’m so happy to be trying new things. And this is one of my new favorites.
A turkey burger! Now I don’t live under a rock so I’ve had turkey burgers before. But they’re always so dry, maybe I’ve had bad ones before? Well I devised a plan to make the most moist turkey burgers I’ve ever had.
I sauteed some diced onion until translucent. While that was cooking, I mixed Worcestershire sauce (just a couple shakes of the bottle,) with Dijon mustard, I added ground pepper, and chili pepper to this mix. Once the onions were done I mixed them in the sauce. I mixed some turkey into that, but it was extremely wet so I put it in the freezer for 5 minutes just to chill. After 5 minutes I was able to easily form a patty and thrown it on the good old George Foreman Grill. Once it reached temperature I put a small amount (although you’d never know it from the picture) of part skim mozz cheese on it. Topped it with a pickle, ketchup, and a piece of lettuce, all on an Arnolds Sandwich thin.
I’m disappointed in the nutrition facts for Worcestershire sauce, I wish I had looked more closely at the bottle. It has HFCS which I’ve been trying to avoid. Since I literally put maybe 5 drops in I’m not overly concerned but it is something that won’t be in my next burger.

I would definitely recomend this to anyone who has tried a turkey burger and thought it was good but just to dry.
On the side I had some more romaine lettuce with the leftover onion in a salad.
It’s in the bowl that’s in the background. I know I took pictures but I can’t find them now! It was pretty much the same as the salad I had for lunch today just with a whole lot of onion.
Well I’m off to lay down for the night now. Tomorrow’s already Thursday! Have a great night everyone!
