Snow Day!
We got a couple inches of snow last night, and it’s still snowing right now actually. And I decided I could take the day off. I still had my sinus headache from the other day (I actually think this is 6 days in a row now) when I woke up, then I saw all the snow and decided to crawl back into bed and call out for the day. I have still have 5 vacations days left for this year and I get 22 more days April 1st (when our fiscal year starts). So I felt that I deserved a snow day off to hang out with Andrew.
I loved having the morning to really make a great breakfast and to think about what I really wanted instead of quickly deciding before it was time to head to work. I love not being rushed. So I went with the Original 7 Grain Kashi Waffle. I love these waffles they are so tasty.
I had these with a small amount of maple syrup.
On the side I made a gigantic fruit salad of an orange, 1/2 a banana, and a handful of grapes.
Andrew had made some light turkey sausage for himself and he gave me one as well.
Yum yum yum! It was the perfect snowy day breakfast.
After we digested our breakfast we braved the snow and made it to the gym. I recently just started running on the treadmills, and I’m surprised at how quickly my body is getting used to it. I’m not about to run any races any time soon, but I did tell my trainer I would love to run a 5k in May. He told me he’d help me achieve that goal, so we will have to see what happens in the months ahead. Already though I’ve been able to up the intervals and I’m excited to see where running takes me.
After the gym I was ravenous. I had an Arnold Sandwich Thin toasted with 2 tbsp pb on it.

I also had a peach Chobani on the side.
Boy did that lunch fill me right up.
For dinner I had an eggplant to use it up and my favorite eggplant dish is of course, eggplant parm. I peeled and sliced the eggplant into about 1/2 inch thick disks, I put them on a baking sheet sprayed with non-stick cooking spray. I stuck them in the oven at 400 degrees for about 1/2 an hour. Turning them over once, and adding a sprinkle of garlic powder over them.
You don’t have to peel the eggplants of course but my mom is allergic to the skin of the eggplant, her hands actually break out in hives so she’s always peeled ours (wearing gloves) and now I feel the skin too bitter and would much rather not have it on the eggplant.
After they were completely baked I poured some sauce over them and put most of them in the fridge for another day. I picked out 4 slices for my dinner and poured sauce over them and then finely sliced an ounce of part skim mozz cheese to put over them.
I had already eaten one of them before I got to take a picture. Ooops.
With this I made a monster sized salad with spinach, romaine, cucumbers, and onions.
Obviously I love onions.
Now I’m just relaxing and waiting for Andrew to get home from his shift at the pharmacy. He had the day off from school but had to go to the pharmacy from 5-9 so we got to spend the day together until about 4:30, it’s better then if I hadn’t taken off because otherwise I wouldn’t have seen him until 9.
