Winter Wonderland

This morning I woke up to the prettiest snow I’ve ever seen! Andrew found out last night, he had a delayed opening today. The roads were pretty bad so I decided to go in with him and go in a couple hours late. It was a good choice because the roads were still pretty icy in spots. Here are some pictures I snapped on the way in this morning.
I had planned on eating my “overnight oats” but for some reason we were running late even with the extra time and since I was going in late I didn’t want to eat my oats so late in the morning. I had a Pecan Pie Larabar on the way there.
It was just okay, definitely not my favorite flavor.
For lunch I had 2 more of my lasagna roll up leftovers.
I also had some celery and pb but I guess I forgot to take a picture whoops.
Towards the end of the day I had my usual snack of pistachios.
Here’s a view of what was near our front door when we came home tonight!
How big are those icicles?! They are some of the biggest I’ve seen!
For dinner tonight we had Snobby Joes from Veganomicon. I made the lentils last night during my mass prepping session. The only thing I omitted from the recipe was the maple syrup because we didn’t have any. Otherwise we made the rest following the recipe. This was my first time trying Snobby Joes and as most of you know it’s freaking amazing!
I had mine over brown rice and with a little mexican blend cheese.
All mixed up:
Andrew ate it and he said it was “delicious, I thought they were really good.” He’s an extremely picky eater so if he liked them, it must be good!
Well I’m off to make some Keurig Hot Chocolate and lay down to read. Hope you all enjoy your Wednesday night!

HOW pretty was that snow? I thought the same thing driving in yesterday morning. Sure the roads were a mess but the trees were so beautiful!!!

you make winter not seem half as bad with those gorgeous pictures!! Thank you for making me appreciate the cold more. hehehe
