In Like a Lion

I have so much catching up to do, but today is the perfect day. I’m home from work because there’s 14 inches of snow outside, so much for the warm March weather that I’ve been hoping for. But this is very true to the old saying, “March comes in like a Lion and goes out like a Lamb.” I stayed home today with Andrew and we’re having the perfect snowy day lots of relaxing and reading. I couldn’t ask for a better Monday to be honest. But I have to start with Saturday since I haven’t posted since then.
Saturday morning I had a doctors appointment, once I was done I went to my parents house and ate some of my sister’s oatmeal. I used 1/2 a cup of oatmeal, 1 cup of 2% milk, 3/4 of a banana whipped in, cinnamon, and vanilla. Of course I put some pb on it too.
I took the time to cook this on the stovetop and gosh was it good. Look at that pb melting perfectly. Here’s a spoon shot like Kath .
I ate this kind of late in the day since I had the doctors appointment, after Andrew got out of work we went to the gym, and then had to come home and get ready to go out for my Mom’s birthday dinner. We went to Yesterdays again, same place we went on Valentine’s day. Except I totally splurged on the meal. I paid for it later though.
First I started off with a big salad from the salad bar.
I had there perfect pasta salad, on a bed of greens, with carrots, onions, cauliflower, and broccoli, all with oil and vinegar for the dressing.
I also snacked on 2 rolls while I waited for my entree. There rolls are so fresh it’s hard to resist.
Here’s the big splurge that had me in agony for hours after dinner. I got baked manicotti. I should have asked for just a little cheese on top, instead I got a ton. And instead of being smart about it and taking some off I ate all of it. Stupid mistake, but at least I learned my lesson and won’t be doing that again anytime soon.
Look at all that cheese! You can barely see the 2 manicottis under it all. The manicotti without the cheese would have been fine, I definitely over did it on this meal. On the way home my stomach started cramping up horribly, I was almost in tears. We went back to my parents to have cake that we never wound up having since none of us wanted dessert. I fell asleep there for a couple hours trying to ignore the stomach pains. After I woke up I felt a little better but we just came home and read until we fell asleep. Boring Saturday night, but really it was my fault I should have guessed after eating so lightly for the past 2 months that that amount of, what I’m assuming to be full fat cheese, would make me ill. Lesson learned.
Sunday Andrew had work in the morning so I hung around the house and cleaned out the pantry and a few other odds and ends. We also woke up to about an inch of snow which was melting quickly. For breakfast I had 2 kashi waffles with sugar free syrup on the side for dipping.
About an hour before Andrew got out of work I had some vegetarian chili, on top of brown rice, with less then an ounce of Mexican cheese.
This was really good and I ate about 3/4 of the bowl. Once Andrew got out of work we headed to the gym, it was an okay day but I felt a little weak, kind of frustrating, but I pulled through.
After the gym we went to Andrew’s parents house to visit, then to Whole Foods to get some dinner, and some food since we were running low. Good thing we did because there’s no way we’re leaving the house today, except to maybe play in the snow, clean off our cars.
I got some salad from the salad bar at Whole Foods.
I got some roasted peppers, and the rest was just a plain old salad, on the side I purchased some whole wheat onion rolls from the bakery and couldn’t wait to try one!
Soooo good! I’m so happy I picked these up.
Then it was time for the birthday cake for my mom. Since I never ate cake as a child, and still don’t like it, my entire family is forced to have ice cream cake on their birthdays. Not that they mind though, really who doesn’t like Ice Cream Cake? I don’t like chocolate ice cream though so I switch with Andrew, I get his vanilla, and he get’s my chocolate and most of my crunchies, I love the vanilla ice cream part, especially the outer layer of that frosting. So even though this looks like I had 2 pieces it’s the the top of mine and the top of Andrews.
I hate that you can’t separate the flavors that well, you can see I still had to endure some chocolate ice cream.
All last they were talking about this big storm we were getting, Andrew’s school announced they were closed last night, I had a feeling I wouldn’t be going in either. We woke up at 5:45 and the snow was up to our front door, when we opened the screen door it skimmed the top of the snow, and there’s a step up to get to the door. We went back to bed and slept until my alarm went off. I had a weird dream that we only got a dusting of snow and everyone at work was mad at me for calling out, when I woke up I couldn’t remember which part was true so I had to run to the window and check, once I realized we did have about 10 inches I knew it was safe for me to really call out. Around 8:30 it started snowing again and we got close to 14 inches. It’s bitterly cold out and I’m happy to be home safe inside instead of braving it out on the roads, I’ve heard on the news there’s been lots of accidents today, and I’m grateful I have an understanding boss that knows I’m the biggest baby when it comes to driving in the snow.
Once we lazily rolled out of bed at 9 this morning I made scrambled eggs for Andrew and I. I also bought vegetarian breakfast “sausage patties” last night and had my first one today. It was different, but overall I liked it. I also had another one of the whole wheat onion rolls with it and a nice cup of Keurig Coffee.
So I guess it’s time to go clean up a little outside, I’m sure there will be plenty of hot chocolate to report on later. If you got a lot of snow today I hope you’re safe at home, if not please be careful on your way home from work later today!

your food always looks delicious… I lived in NY on and off for years and have yet to try the wholefoods salad bar! It always looked amazing, but the rest of the city seemed to think so too and it was always too crowded for me!

Enjoy the snow if you can- before we know it, it’ll be back to summer heatwaves and we will be glued to AC’d rooms!

I love onion rolls, even though I don’t like onions in general. Funny, yes! I like onion rings too. Haahah! Anyways, love the eats. OHHH CAKE!!! yummmmmy!

lucky you on your snow day!!! and yes, march is certainly in like a lion, grrrrrr. so sorry about all the stomach mess after your bigger, but at least the food tasted good going down, right?
i loooove all cake now, but i was strictly an ice cream cake girl growing up. EVERY bday party had to have it. the frosting is my favorite!!! (though i quite enjoy the crunchies too :-))

Oh my what amazing eats. I loooove the salad bar at whole foods and always load up on the sweet potatoes and marinated mushrooms! 🙂
Fresh bread rolls are also super hard to turn down! You had such a fabulous weekend…yuuuumy food EVERYWHERE!
