Stuck in a Pickle

Monday’s over the rest of the week should fly right by I hope.  Hope you all had a pleasant Monday.  Mine wasn’t bad, but I’m starting to feel my allergies hit me.  The weather was warm this morning but the the time I left work it was freezing.  I’m hearing that it’s supposed to be pretty mild for the next few days, so I hope that’s true.    I had such a hard time getting up this morning I just had to throw some things in my bad and hoped my meals would work out for the day.

For breakfast I grabbed a blueberry 0% chobani, and mixed in my usual granola.

It was the end of the bag so it was probably a little more then a quarter cup but it was delish as always.

For lunch I grabbed some left over cavatelli that Andrew had made, with an all natural sweet tomato and basil sauce.  The sauce was definitely the star of the show.

This lasted me until I was leaving work, then I got super hungry super fast.  I snacked on a mcintosh apple on my way home.  I snapped this picture before I even pulled out of the parking lot.

As I was reading through so many of your blogs today I kept seeing some delicious sandwiches, I knew I had to make myself one for dinner tonight.  I decided to have 3 of the meatless “Meatballs” with lettuce and spicy brown mustard on Arnold’s Double Fiber bread.

On the side I toasted up a whole wheat tortilla and made chips.

I may have had another pickle while I was cleaning up the kitchen.  If I did it probably looked like this:

I can’t get enough of these pickles!

I’m just relaxing now, and then I’m going to make some lunches for Andrew and I for tomorrow and then as soon as he gets home from work I’m hitting the hay.  Or I may have a bowl of fro yo before I go to bed,   I am a tired girl but I’m also a little snacky.

    I love pickles. I used to work at a restaurant that had them in the big barrels. So yummy!

    Mmm I used to go through pickles like you wouldn’t believe. Then one year I gave them up for Lent, and it totally cured me of my addiction. I might have to go back for a few after seeing this post, though…
