Last Time…

This is the last Thursday night where I will have work the next day for the next 24 weeks. Sounds kind of nuts huh? With almost everything figured out I’m feeling much more upbeat and plan on spending a lot of time enjoying my Fridays during the summer. 2 of my friends don’t work on Fridays so we’re already planning some beach Fridays!
For breakfast this morning I had my usual Chobani (peach flavored today) with some granola. Maybe this picture will make it a little less boring since I’ve eaten this breakfast everyday this week.
My boss is on vacation both today and tomorrow so I was fielding a lot of questions that would usually go to her it was a busy and draining morning so about 1/2 way through I had a gigantic orange for some energy.
This orange was super juicy, just looking at this picture is making me want another one, unfortunately I think this was my last one.
For lunch today I brought a GIGANTIC salad in. This salad contained:
- romaine
- spinach
- 3 meatless meatballs
- carrots
- mexican cheese blend
- and Salsa
I didn’t finish all of this salad it was just too big. But it certainly was delicious!
When I came home there was a package waiting for me!
You’ve probably seen these floating around on the blogs and I was so excited to give these a try.
I got 9 bags of chips to sample.
I wasn’t very hungry yet but I decided to snack on a bag of these before dinner. I choose the sea salt & vinegar to try first.
Excuse my nasty nails they need to be redone so badly!
These chips are really delicious, they are not like normal potato chips the texture was more like a rice cake. The flavor was really good though and I can’t wait to try the others.
Finally I got hungry for a meal so for dinner I had brinner once again.
I had a mozzarella and spinach omelet.
On the side I also had a butter piece of double fiber toast.

This dinner definitely hit the spot!
Well I’m off to read and go to sleep, after such a busy day I am definitely exhausted!

beach days! sounds like your summer will be so much fun =)
your salad looks so good, I actually never thought of putting salsa on my salads, but it makes perfect sense because it packs a lot of flavor for pretty low calories

ahhh, danielle, i’m sorry i’m so behind the ball!! i just caught up on your last 4 posts — no wonder you’ve been so stressed. it always takes a while to process a change like this and get over the initial shock, but it sounds like you’re well on your way and starting to get used to the idea of less work/reduced income … and the potential perks of that!! beach fridays all summer long, niiiiiiiiiiice 😀

Do you have to work (4) 10 hour days, or just (4) 8 hour days?
My office did a mandatory 4 (8) hour work week for a month to save money. I had Mondays off, which was awesome! Until I got my paycheck….not so awesome!
That will be great to have a 3 day weekend!
One rule I had was no TV (so I wouldn’t waste a few hours watching nothing) and a to do list of things I wanted to get done. It worked really well!

despite the stress that the change in your job might give you, it seems you’ll be making the most of the pluses – good for you!
pop chips! if i beg them maybe they’ll ship overseas…… the omelet looks so good, why is it that every omelet i ever see on blogs look perfect, but mine ALWAYS ends up being scrambled egg no matter what???

I’m just getting caught up on blog reading, so I missed your post a couple days ago.
I’m sorry that the economy hit you too. It really sucks for everyone. I just applied for umemployment, and I was living off of a 6 figure salary. I never thought this would happen to me and have to do everything I can so I don’t lose my house. I’m just thankful that my husband still has his job, but I get so worried that he will lose his too. I hope things get better for everyone soon!

It sounds like things will work out okay, and I’m so happy! I know what you’ve been handed probably isn’t what you want, but at least things are working out for now. and beach days sound like so much fun!

ahhh.. ive missed the last couple of days! sorry!!! to have fridays off would be a good thing for me! im not sure if i would want to take a pay cut though! beach fridays sound like a good way to kill the boredom on a friday!
i hope things get better with work and everything. these days, it seems like everything is at a standstill.. and no one wants to make a move. My boss said its mostly out of fear of the unknown.. but whatever it is.. its stressful!!!
