Where Did the Sun Go?

Today I woke up to a beautiful sunny day, then I walked outside and “brrr” it was cold, and unfortunately the sun didn’t stick around long and by 9 it was look more like winter then like the sunny spring days we’ve been having.  I’m thisclose to packing up my things and heading south.

At work today I realized that I have training for the next 4 work days, meaning with Friday off the next time I’ll be sitting at my desk will be Wednesday.  Today was crazy busy trying to get everything done so that I won’t be bothered during training.  I’m so looking forward to my first Friday off.   I have moved past the point of panic and have decided to just relax and enjoy the long weekends.  Obviously if I need the money I’ll pick something up but I have a feeling I’ll be okay for a while. 

I still have a lot of blog reading and commenting to do so let’s get into today’s eats.

For breakfast this morning I had overnight oats.  I was going to attempt to eat it cold as I’ve seen some bloggers do.  Totally not my cup of tea, the picture is from before I heated it up but after a couple bites I marched my behind to the microwave and nuked it.

For lunch today I revisited a meal I really enjoyed a few weeks ago, a pb and apple sandwich.

I can’t believe it took me 24 years to try this sandwich but it’s definitely one of my favorites.

While hurrying to get my work done I snacked on some grapes around 3:30.

They are totally on their last leg.

After work I came home and did all the dishes in the sink while contemplating what I wanted for dinner.  I had no clue what-so-ever, I think mentally I’m so ready to be eating meat again that nothing sounds good unless it’s got chicken in it.  I still hadn’t figured it out a while later but decided to have some tacos using MorningStar veggie crumbles.

While heating up the crumbles I also added from frozen corn kernels and then mixed in the taco seasoning.  I had it on a ww wrap with less then an ounce of cheese, and some romaine lettuce.  I loved the crunch the corn added to the taco.  I plan on adding corn more often.

Well like I said I still have some catching up to do with my Google reader, so I will “see” you all tomorrow evening.

    I’m so with you about packing up and moving south. I’m so tired of winter!

    I totally heat up my overnight oats too, just can’t get past it!

    I find that if I add fresh fruit, the oats taste much better!

    PB and apple is one of my favorite combos! That sandwich looks great!!

    Mm, your lunch looks SO good! I love, love, love date or carrot/raisin bread with peanut butter and banana but I also love apples and peanut butter so I must try that combo on a sandwhich!

    the sandwich looks great – i’ve yet to try that combo! right now london is in great shape weather-wise but it doesn’t usually hold up….foggy london is the average status. so i’m with you!

    I’m glad you’re looking forward to Fridays off! It sounds fabulous to me, even though it’s not really your choice 🙂 and like you said, you can always pick something else up if you need to.

    apple + pb is so good, but I’ve never put it on a sandwich either!

    Blech, yeah, definitely heat up the overnight oats!! Since I don’t use instant oats anymore and have no time in the am, I always make mine before bed then add a mashed banana and microwave = perfection!

    It did remind me, however, that I left my little baggie of grapes (also on their last leg…) in the fridge. 😦 No grapes for me this afternoon. Boo!

    the sun really makes everything so much better doesnt it?? love that sandwich! does that really keep you full most of the day??? i think i might be eating way too many calories…

    I have been talking a/b this all week! I mean there is a reason they have seasonal-depression disorder. The lack of sun really wears on you! Just keep telling yourself EVENTUALLY it will feel like spring…even if it’s summer:P I haven’t had a pb/apple sammie in too long! Makes me feel like a kid again.

    I am planning to try raw/soaked oats next week some time…little apprehensive and likely to nuke them last minute, lol.

    yummmm, love the apple and pb sandwich!

    with overnight oats, i MUCH prefer to do them in yogurt instead of milk — huuuuge texture difference. milk is just too watery. but it’s also hard to get pumped about cold breakfasts when it’s not quite warm out yet. it actually snowed for about 5 minutes this morning. i almost cried!

    so glad you’re looking forward to the long weekends coming your way. might as well live it up!

    Mmm, the PB and Apple sandwich looks absolutely delicious!

    I like to soak my overnight oats and then add some greek yogurt and a banana in the morning, delish!!

    I am also not a fan of the overnight oats (hence the new love for steel cut oats).
