M.I.A
I haven’t been having the best few days. My ear and throat infection is all cleared up. On my Friday off I wasted it by doing nothing I should have. I assumed I’d have all weekend to go foodshopping and do all the errands I needed to get done. But Saturday morning my mom got pretty sick and ended up going to the hospital. After a few hour wait she found out she needed her appendix out. I stayed with my sister all day while my dad waited with my mom she finally went in for surgery at around 8. She’s recovrring well and should be coming home today.
I didn’t take any pictures of my food and I’m about to go to the hospital to visit and wait with her until she can come home.

Big Announcement and Giveaway Winner!
I can’t believe tomorrow is my last day already, we have to leave the house early Sunday morning. I’m nowhere near ready to leave! This place is so amazingly relaxing. The only good thing is next week because of Memorial Day and my Friday’s off I only have a short 3 day work week ahead of me. Should make it a little more painless.
Yesterday was a really great day we woke up hung out by the pool a little later my dad made some delicious blueberry pancakes.
Since we had a late breakfast I wound up snacking on an unpictured orange later in the day and never ate a real lunch.
We hung out by the pool for most of the day.
Yes I bought goggles to wear in the pool. I’m a nerd like that.
I can’t tell you how many pictures I have of me walking, I never know about them until I upload my pictures.
Later on Andrew and I went for a bike ride down to one of the beaches.
Afterwards we came back and had dinner. I had some leftovers.
I had the chicken leftover from the night before.

After dinner Andrew and I took a trip to Jockey Ridge State Park. It is the largest natural sand dune on the East Coast. Climbing up those dunes is tough but it is the most amazing view, on one side you have the ocean and on the other you have the sound. It’s absolutely breathtaking. And it will now forever be a very special place to me.

As we were walking along Andrew stopped hugged me and got down on one knee, he pulled out the most beautiful ring in the world, and I started crying instantly. I knew it was coming but he had tricked me into thinking it wouldn’t be for a little while. I had always said I didn’t want a lot of people around when he proposed especially strangers, and as we were walking up the dunes he kept pointing to areas where there weren’t a lot of people, and he continuously was scoping out the area around us. I had a feeling it was coming but wasn’t sure. I never thought I’d be one to cry I though I would be far too excited, boy was I wrong. We left the park just as it was closing and decided to celebrate with some ice cream.
I wanted to post so badly last night but needed to call family and friends first, I’m sure you all understand.
I would post today’s eats but it’s getting late and I’m exhausted, plus they were pretty boring. I have a ton of leftovers from our dinner out tonight but will post them when I get around to eating them.

I used to spend summer vacation there growing up. Most of my relatives are on the East Coast. When we were younger and would tell our friends we went to the Outer Banks (I’m from Chicago) they would say “Where?”
Awesome place to visit and great place to vacation!!
Thanks to everyone who entered I loved reading your favorite vacation spots, I hope to travel to some of those one day!

Catching Up

Sorry I disappeared yesterday, I’ve been trying to enjoy vacation now that I’ve only got 4 days left. This week is just flying by! It’s been a lot of fun though and we’ve pretty much done everything we wanted to do while here except for one more thing that we’re planning on doing tomorrow night. Other then that it’s going to be a lot more relaxing on the beach, by the pool, and some bike riding thrown in.
After posting the other day we had dinner of spaghetti and meatballs. It was a cold rainy afternoon so it worked out perfectly.
I also had a side salad of romaine and cucs.
With some of that light balsamic that’s peaking over the bowl.
Later on Geoffrey came out to play. I had no idea hermit crabs were nocturnal but they definitely are once the sun goes down they come out to play. For the past 2 nights we’ll go to bed and hear Geoffrey moving around, in the morning we’ll see that rearranged all his things in his cage.
Later on while watching TV Andrew, my parents, and I all split a 100 calorie bag of popcorn.
The next morning we woke up and I had a smoothie that contained skim milk, pom juice, high fiber cereal, raspberries, blueberries, banana, and pb.
After breakfast Andrew and I went on a quick 6 mile bike ride to the neighboring town of Duck, NC.
It was a windy day but bike riding was a good option for something to do outside.
Once we got back we ate a quick lunch. I had a random mix of things I found in the fridge.
I had 1/2 an Arnold Sandwich thin with a string cheese to make a piece of super cheesy bread.
I also had left over rice from the other night.
And for some crunch I had 1/2 a green pepper.

Later on we did a little more shopping (I actually bought nothing!) But Andrew did buy some local made fudge and I of course helped him eat some of it.
Absolutely delicious!
For dinner last night we had some home made burgers.
On the side I had some Food Should Taste Good Tortilla chips.
We also had some corn we picked up from a local stand.
I of course had another apple cider on the side.
We went to bed pretty early last night and I was excited to wake up and see the sun shining bright. It was still a little windy but it was a good day to lay out in the sun and go in the hot tub. I had some cereal and yogurt for breakfast.
We spent the morning out in the sun before we decided to take a short drive to Manteo for lunch and to walk around.
We ate lunch at a 50’s style diner, it was so cute.
There wasn’t many choices unless I wanted something fried or another burger, so I played it safe with a grilled chicken sandwich.
Then we walked around the very scenic town of Manteo.
I’m a rebel and climbed to the top even though it was blocked off.
We came back to the house and the wind had died down enough to swim and I stayed in the pool for an hour or so before we had to get ready to go to dinner. We went to a restaurant we really enjoyed last year and decided to visit again.
I decided to get the St. Lucia Chicken because I had that last year and loved it, and even though I had a chicken for lunch I decided to have it again because it was something really really good.
After ordering some really delicious bread came out.
And not long after our dinners came out.
I ate one piece of chicken, most of the beans and about 1/2 the rice. I brought the one piece of chicken home to eat for lunch tomorrow or Friday.
Well that’s everything up till now! I’m going to try to update tomorrow so I don’t have to do a marathon post like this again! Hope you are all having a fabulous week, see you tomorrow!
Rainy Day Giveaway
I’m so excited to have my first giveaway! Let’s get the eats out of the way first.
After blogging yesterday I had a banana with pb.
You probably didn’t notice but the house we’re renting has the same plates my mom has at her house. Weird.
Then Andrew and I did some more shopping. The rain never really slowed down yesterday so we watched Little Miss Sunshine after returning until dinner time.
For dinner we were going to have grilled chicken but with the rain my dad didn’t feel like going outside to cook, so we baked it in the oven, it was marinated in Italian dressing.
On the side we had broccoli and Near East Wild Rice in the Garlic and Herb flavor.

Last night we went to bed nice and early, when I woke up this morning it was raining again. The good news is the weather is supposed to be really nice the rest of the week, so we used today to do some more shopping. Before we left I had a Peach Chobani with cereal.
I love cereal/yogurt messes.
We went to do some more shopping today at the outlets. In addition to some clothes that I purchased, my SUPER wonderful mom bought me a gorgeous new Coach bag!
I love the blue color! I have the best mom!
Between stores I had a Clif Chocolate Chip Z bar.
On top of my Coach bag from last year.
Andrew and I also made a special purchase today. I’d like to introduce you to our new pet, Geoffrey.
He is a Hermit Crab with a Giraffe painted shell. Giraffes are by far my favorite animal and if I can’t have one of those as a pet, a hermit crab with a giraffe shell will have to do. Apparently he is tired from an exciting day he was climbing on the side of his cage for a while on the way home but now he’s sleeping, I’m sure you’ll see plenty of pictures of Geoffrey in the future.
For lunch we stopped at Sonic. We don’t have any Sonic’s near us so everyone wanted to try it, I was going to wait until we got home to eat but we still had more shopping to do. So I got a grilled chicken sandwich with no mayo.
It looks like a whole wheat bun but I can’t be sure. It was pretty good.

My First Giveaway!
One of my favorite things about vacation is buying my friends souvenirs. It’s always so fun to come home from vacation and share something from your time away with your friends. You girls have all been really good friends to me since I started this blog back in January so although I can’t buy something for everyone I’d like to give you each the chance to have some great souvenirs from The Outer Banks! I bought a few things to give to one lucky reader.
Here’s each item in the giveaway.

I love salt water taffy and I found a cute little tote bag stuffed with some salt water taffy.
Last part of the package is a can of nuts from a local shop that’s called Try My Nuts. I picked out a can of peanuts called Dirty Nuts. They are seasoned with salt, paprika, black pepper, garlic, onion, and chipotle. I was able to sample them while at the store yesterday and I can tell you they are really delicious.

$5 Footlong…
ZAand it wasn’t from Subway. But we’ll get to that.
Yesterday was spent like any first day of vacation, hanging out by the pool, going to old favorite spots from the last time we were here, and of course napping.
For breakfast yesterday I had a cereal/yogurt mess. It included vanilla chobani, 365 high fiber cereal, and Kashi Island Vanilla shredded wheat.
There is yogurt under there somewhere.
Then it was swimming time. We hung out in the pool for most of the day.
Even Bailey enjoyed her time by the pool.
Here’s a picture Andrew snuck of me enjoying the sun.
I went in the hot tub for like 2 minutes but it was way to warm I felt like I was boiling in a soup pot.
After swimming and sunning we were hungry and we decided to go to one of our favorite local hamburger/hot dog joint.
Last year when we here for 2 weeks (oh and by the way “here” is the Outerbanks. I didn’t realize I never said where we were until Caroline asked), and we came like 4 times. The chili dogs here are the best I ever had, and we had been talking about going again since my parents booked the trip. And I decided to have the special of the day a $5 footlong with fries and a drink. Actually my entire family and Andrew had the special. Go big or go home right?
I ate and loved every bite. Spankys is a cute little place that has monkey’s just about everywhere.
Once we came back it was raining so we hung out on the screened in porch until the rain stopped and we went right back in the pool. Then it looked like rain again so we came in and I fell asleep for a couple hours.
After I woke up refreshed and ready for to do some food shopping. As soon as we got back I made myself a big salad and was going to have a pb sandwich on the side but wasn’t that hungry, that footlong really filled me up.
It was romaine and cucs with Newman’s Own balsamic vinaigrette.
This morning we thought we would be waking up to rain but luckily it was sunny until early afternoon, we went for an early morning swim, and then I attempted to catch up on your blogs. Once everyone was up and showered and dressed we went out to breakfast. We went to a buffet called Western Sizzlin’.
I got a little of everything.
First to attempt to eat some healthy food I had some fruit.
Then I had a big plate of all the breakfast goodies.
A French toast stick ( I went back for a couple more of these).
I also had some homefries, bacon, a biscuit, and eggs.
There’s a piece of toast under there but then saw the biscuits and decided to eat the biscuit and not eat the toast. I can’t remember the last time I had a biscuit and I can have toast any time.
Breakfast was of course wonderful, and then I did some super secret shopping, you’ll read about it soon enough (HINT giveaway tomorrow).
After returning back to the house we did some more swimming and then it started to pour. We’re inside now, but as soon as I post this we have some more shopping to do.

Greetings from Vacation
Well after a super long trip in the car, that felt like it would never end, we arrived in NC. We got here around 12am. The first thing we did was get changed and jump in the pool before passing out. But let’s back up to the time leading up to and including the road trip.
After avoiding the hornet/wasp/killer bee I finished loading up the car and headed out for the last minute errands. Nothing went right! I went to cash in some change we had been saving ($201!!!), the first bank I tried the machine was broken, the second machine became full after a few minutes and I waited for assistance (for-ev-er), once I left the second bank I was forced to turn right instead of the left I wanted to make, and I ended up a little lost. I ended up getting to the school kind of early so I stopped for lunch and had a salad.
This salad include, romaine, cucs, onions, chicken, and a very small amount of cheddar cheese, with a light balsamic dressing on the side (hiding in the background). I ate about 1/2, but did eat all the chicken. After leaving the outlet center I couldn’t find my car and was convinced it had been stolen. After taking a few minutes to walk around I located the car exactly where I had left it.
Finally I picked up Andrew and we were on our way. I drove a total of 40 minutes before I switched with Andrew, I didn’t even make it out of Jersey, my job is to be the entertainment not the driver.
About 1/2 way through the ride we had clif bars.
After yet another 2 hours we stopped for dinner. I have not eaten fast food this year but unfortunately I broke that strike last night. We stopped at Wendy’s where I ate a small chili (ate a little more then 1/2) and a baked potato.
At the time I was concerned I made the wrong choices with the chili but after looking up the nutrition facts the chili had 190 calories and 6 grams of fat. With the weird buttery spread this whole meal (had I finished the chili which I didn’t) was 570 calories and 11 grams of fat. Not bad for fast food, and definitely not what I expected it to be. Pleasant surprise not something I’ll do regularly but during a 9 hour road trip I feel like I made the best choice.
It felt so good when we pulled in the driveway and were able to jump out of the car we put our bathing suits on and jumped right into the (heated pool).
The sun just came out after a little rain so I’m going to go jump in the pool and enjoy it.

Empty Fridge
I guess I thought I had more food in there then we did we currently have yogurt, eggs, blackberries, and some bread as well as some condiments. I have no fresh produce and it’s making me nuts! We leave Friday so I’m guessing we’re going to be digging in the freezers for meals for the next 2 nights.
For breakfast I planned on having cereal and yogurt, well I totally forgot the yogurt. I also had no money to get milk from the vending machine. So my breakfast was dry cereal. As you can imagine this did not do a good job of filling me up.
Lunch was part of cleaning out the fridge, my parents actually left for vacation a few days ago so I’m doing my part in cleaning their fridge out as well. They had a stuffed bread last week for dinner, it was stuffed with sauce, cheese, and chicken breast. It was delicious and I was totally satisfied from this meal.
For dinner I had an opened jar of sauce I had to use before we left, I also had some cleaning to do so I made a super quick dinner of whole wheat angel hair pasta, and meatless meatballs.
Delicious simple dinner in between chores.
I’m pretty much all packed for vacation minus the things I use daily. I’m shocked because typically I am such a last minute packer, it feels good knowing I have at least one thing out of the way.
I haven’t mentioned my weight loss on the blog since the first week when I lost 4.5 lbs. Well since then I have lost a total of 25lbs. I still have some more weight to lose though so I hate buying clothes knowing I hope to get smaller, unfortunately I only have one bathing suit from a couple years ago that fits so I will have to go shopping for a few more tomorrow. Yuck I hate bathing suit shopping!
I got a couple comments yesterday about my lack of snacking. I have never been a snacker. I will occasionally snack and I do post those snacks or at least write here that I did. I do sometimes take bites of Andrew’s food and don’t take a picture of it or write about it on here but we’re talking about bites. Before I started the blog my eating was all over the place, some days I would only eat dinner so I think my body is still getting used to the idea of eating 3 normal meals a day. I think I’m getting enough calories without snacking during the day but I’m going to start doing some calorie counts and make sure I’m where I should be without them.
