Sweet Summer Cravings

I am feeling so much better today!  It’s amazing what a difference 24 hours can make.  I ate all my meals today and felt more like myself again.  I’m a pretty easy person to get along with but I can get pretty ugly when I’m mad.  I’m just happy that it’s all over and we’ll see what happens from here on out.  Once again I got some great advice and support from you gals!  You are the best!

I can’t tell you how happy I am that tomorrow is Thursday!  As usual I have off on Friday and then have the next week off!  After all the stress from yesterday I’m ready to have some relaxing fun times with my 2 best girlfriends and their boyfriends on the camping trip this weekend.  I just hope tomorrow goes by quickly, it kinda feels like the last day of school or something which is stupid because it’s only 10 days off not a whole summer.

So we need to do some serious food shopping, we don’t even have the staples of milk, bread, or eggs, but it seems stupid to do it before the we go away for the weekend.  So I was kind of scrounging in the kitchen for meals.  Once again I totally forgot my camera, I used my Blackberry though while I was at work, not the best pictures, sorry!

For breakfast I had a chocolate chip clif z bar with pb and then an orange on the side.

Oranges are so good right now, I can’t get over how juicy and delicious the last few I ate have been.

Lunch was exactly what I said it would be last night.  Leftover Chicken parm.  I meant to bring a side salad but forgot this morning.  So I guess the tomato sauce is going to have to count as my vegetable for lunch.

I definitely made up for my lack of veggies with dinner though, ever since I mixed the rice pilaf with broccoli and green beans last week I’ve been wanting it again.  It’s just way too good.

I definitely went back for the last spoonful of rice with another piece of broccoli and a whole mess of green beans.  Such a simple meal but it’s so darn good,  I can not get enough.

After dinner Andrew and I decided we wanted dessert.  So unlike us!  We decided to go to a local Italian Ice place which also serves Ice Cream and Cream Ices.  I got a small pb cookie dough cream ice.

So delicious, I’m going to pretend it’s summer even if it doesn’t feel like it at all!

Well I’m off to start packing things up for the weekend.  Tomorrow night Michelle, Jessica, and I are going shopping for the camping food, anyone have any suggestions of healthy foods to eat while out in the woods?

    I have to agree, I love veggies and pilaf!

    I second the trail mix, also any kind of bar makes for a great camping snack.

    Lara bars, animal crackers, Dr. Krackers, Melba toasts, LC cheese, roasted unsalted cashews or almonds peanuts. Dried fruit. Fresh fruit. Pita chips. Rice cakes with pb. PB&J!!!

    THere is absolutely nothing like ice cream when it is super hot outside 🙂 Just make sure to pack some sandwiches and snacks and be prepared, I am sure you will be okay!

    Oh! It’s been ages since I had an Italian ice–we used to go to a place called Doodle’s, and I always got the chocolate PB cup:)

    I’ve never been camping, but I would imagine that Clif bars would be good to have on hand!

    Hmm…camping. Sweet potatoes, marshmallows ( 😛 ) Clif bars, fruit…you could make up individual portions of trail mix with cereal, fruit, etc.

    We used to make “gorp” when we went out in the woods hiing or camping. Gorp was nuts, raisins, and m and ms. Ok, so it’s basically like granola without the oats! Dried fruit, granola, and type of bars, lots of water, those are some suggestions. I like to just go to the grocery and browse the isles for ideas! Oh, and don’t forget s’more ingredients!

    Hm, camping foods? Instant oatmeal, Clif bars, trail mix, foil veggies, peanut butter, baggies of cereal, a loaf of bread 🙂

    hooray for camping! that will be soo fun. i recently went camping and managed to eat clean the whole time. i made a huge batch of protein pancakes, some homemade protein bars, stuff for tin foil dinners, hummus, veggies, apples & PB, nuts, alternative bagels & laughing cow light, wraps, hard boiled eggs, cottage cheese, salsa, ok i will stop there. HAVE FUN!

    I imagine that you’ll have a campfire – I’d make foil potatoes – dice one potato for each foil packet, drizzle with a bit of oil and whatever seasoning, seal well and cook over the campfire – the outsides get crunchy, but the insides are still tender!

    I haven’t been camping in AGES!

    yum ralphs! i am a huge fan of strollo’s myself!!! i cant wait to hit up the lighthouse when i am home in july for some MAJOR chocolate & cherry ices!!!

    i second the foil potatoes! we used to do that with a whole foil meal…wrap cooked chicken, canned veggies, canned potatoes, some cream of chicken soup for moisture and seasonings into al. foil and wrap tightly. then just cook on a grate over the fire. it’s a full, amazing meal! and smores of course!

    Awwww! I am sorry to hear about your bad day yesterday! Danielle we are so the same in that we are people pleasers!! When people dislike me or say something to make me mad or when I am fighting with someone, it eats away at me. Unforunately, I am the exact opposite of you and I eat too much! Clearly not eating and eating too much is an emotional issue. I really have to do some research and write a post about it because I am not the only one in the world who suffers from this. I am glad you are feeling better today!!

    Great healthy camping foods: veggie dogs!! popcorn or baked chips! s’mores really aren’t that bad: get healthy graham crackers & dark chocolate and marshmallows aren’t all that bad for you. Mixed veggies are good too.

    10 days off might as well be the whole summer! and that cookie dough ice looks so yummy. perfect for getting in the summer mood. (and btw, your mom’s chicken parm sounds amazing … and wagon wheels are my FAVORITE pasta! every since i could eat solid food 🙂 and they’re so hard to find. esp in whole wheat form!)

    i’m sorry about the drama with future b-i-l’s gf … so unnecessary! i don’t see how anyone could be mean to you. i will go beat her up if you want 😛

    Yay glad to hear you’re doing better Danielle!!! It’s ok, everyone has their ups and downs, and NOBODY is a pleasure to be around when they’re mad, so you’re definitely not alone. hahahah

    As for camping food, I totally would bring packets of salmon or tuna (instead of canned) for some protein, and easy to eat fruit…bananas, apples…gosh i’m sure everyone has said that already! Those and energy bars are popular huh? I would also bring gum and sweets, and pretzels for fast easy sugar boost when you’re low on energy and electrolytes!

    Don’t forget insect repelant!!!

    How about bringing some bars, they’re healthy and easy to bring/eat. Wraps are always fun and easy to make healthy too. My favorite wraps are the ones I make using some whole grain bead and I put Tofutti cream cheese, tofu, lettuce and cucumber in them. So good. Fruit salad is also good and easy. Or make some nice whole grain muffins? 🙂
