Big Announcement and Giveaway Winner!
I can’t believe tomorrow is my last day already, we have to leave the house early Sunday morning. I’m nowhere near ready to leave! This place is so amazingly relaxing. The only good thing is next week because of Memorial Day and my Friday’s off I only have a short 3 day work week ahead of me. Should make it a little more painless.
Yesterday was a really great day we woke up hung out by the pool a little later my dad made some delicious blueberry pancakes.
Since we had a late breakfast I wound up snacking on an unpictured orange later in the day and never ate a real lunch.
We hung out by the pool for most of the day.
Yes I bought goggles to wear in the pool. I’m a nerd like that.
I can’t tell you how many pictures I have of me walking, I never know about them until I upload my pictures.
Later on Andrew and I went for a bike ride down to one of the beaches.
Afterwards we came back and had dinner. I had some leftovers.
I had the chicken leftover from the night before.

After dinner Andrew and I took a trip to Jockey Ridge State Park. It is the largest natural sand dune on the East Coast. Climbing up those dunes is tough but it is the most amazing view, on one side you have the ocean and on the other you have the sound. It’s absolutely breathtaking. And it will now forever be a very special place to me.

As we were walking along Andrew stopped hugged me and got down on one knee, he pulled out the most beautiful ring in the world, and I started crying instantly. I knew it was coming but he had tricked me into thinking it wouldn’t be for a little while. I had always said I didn’t want a lot of people around when he proposed especially strangers, and as we were walking up the dunes he kept pointing to areas where there weren’t a lot of people, and he continuously was scoping out the area around us. I had a feeling it was coming but wasn’t sure. I never thought I’d be one to cry I though I would be far too excited, boy was I wrong. We left the park just as it was closing and decided to celebrate with some ice cream.
I wanted to post so badly last night but needed to call family and friends first, I’m sure you all understand.
I would post today’s eats but it’s getting late and I’m exhausted, plus they were pretty boring. I have a ton of leftovers from our dinner out tonight but will post them when I get around to eating them.

I used to spend summer vacation there growing up. Most of my relatives are on the East Coast. When we were younger and would tell our friends we went to the Outer Banks (I’m from Chicago) they would say “Where?”
Awesome place to visit and great place to vacation!!

Suds and Sawdust
This weekend is like a blur it went by so quickly! I can’t believe it’s Sunday night and although it’s not even 9 yet, I’m so ready for bed. I had a really fun weekend I just wish it was a little longer.
So after I blogged yesterday I hung out and did some dishes while talking on the phone. Around 2 I ate lunch. I had my leftover pizza. I took pictures of it yesterday but deleted them by mistake so this is my picture from Friday night.
After lunch and Andrew returned from work we hit up the gym, my run sucked yesterday because I got an awful cramp. I did as much as could but wound up only running for around 20 minutes and then hopped on the bike for a little while, the cramp went away eventually and then I did some arm exercises.
After the gym we went to target and shopped around a little, then we went to dinner at SaladWorks. I got the caprese Panini.
It was on sourdough bread and it seriously delicious!
After dinner we came home and got ready to go the bar. It was actually a lot of fun. When you pull up it just looks like a house, there’s a sign out front though, that’s the only way you’d know it was a bar.
It was really tiny but it was pretty nice. There was a shuffleboard table, which our group used most of the night. I suppose this is the sawdust they are referring to on the sign.
And here’s a picture of me and the birthday girl. Since our birthdays are so close we decided that next year Andrew and her boyfriend need to throw us a big surprise party with Giraffes (my favorite animal) and donkeys (her favorite animal) they did not seem excited about our ideas at all.
I stuck to water once again and got home at a pretty decent time. I had some trouble falling asleep though and it was so cloudy this morning I wound up sleeping until almost 9:30! And even then I was barely awake. For breakfast I wanted another smoothie so I made the exact same one as yesterday.

We had some errands to run so after this we went out. I did wind up getting a mani pedi as a few of you suggested as a way to relax! With my friend Jessica, it was great because we rarely hang out just the 2 of us so it was great getting to sit and talk with her! We also ran to my parents house to visit for a couple hours. Then we needed to do some food shopping I seriously had no veggies left in the house. Once we got home from food shopping I snacked on a piece of pb chocolate banana bread with some more pb smeared on top.
For dinner I made a burrito with vegetarian refried beans, brown rice, salsa, and Mexican cheese blend, all on a ww tortilla.
While this was heating up in the oven, I snacked on a pickle, while chopping up some veggies for a salad.
I could seriously eat these pickles everyday they are my definite favorite.

I ate most of the burrito and Andrew helped me finish it off, and I ate most of the salad as well and it was gigantic!
I’m going to finish off my relaxing weekend with a little reading in bed. I hope you all had a fantastic weekend, enjoy the rest of your Sunday night.
Catching Up!
Good Morning Bloggies! It’s so sunny out, and I’m feeling a million times better then I did all week. Although the sun is being kind of tricky because it’s still chilly out. I’m so excited to be doing nothing, but catching up on all your blogs and relaxing until like 1:30. I have some things DVRed I might start watching soon including America’s Next Top Model.
Last night after I finshed getting ready I met my friends at a bar nearby. I once again stuck to water, but Andrew got a hot pretzel and I ate a piece of that dipped into some salsa, that someone else got with their quesadilla. It was really good. But no picture sorry!
This morning I woke up and thank god I did wake up somewhat early because for some reason Andrew’s alarm didn’t go off and he needed to be up for a training at his school for 9. He pretty much had just enough time to get dressed and run out the door.
After he left I got up and decided to make a smoothie based on Rose’s over at On A Lobster Placemat. I had to vary it a little based it on what I had in my own kitchen.
- A bruised banana
- tbsp of pb
- pineapple (frozen)
- blueberries (frozen)
- Half a cup of oats
- skim milk (about 1/2 a cup)
- and 1/2 the 8 ounce bottle of POM.
I thought it was warmer out then it was so I walked out to enjoy this on the deck.
Oh my gosh this was so good, I never would have thought to put oats in a smoothie. Thanks Rose for inspiring me to try a great smoothie. Believe it or not this is the first smoothie I have ever made! It was really great, and I’m surprised at how filling this was! I had to take it inside just a minute later I was so cold, and the chill factor from the smoothie didn’t help.
Hope you enjoy your Saturday, I’ll be back later tonight! I forgot I have a friend’s birthday out tonight, at a bar that’s an old speakeasy! I’ve never been there but i’ll be sure to take pictures when I do go tonight, because it sounds really cool to me.
Fat Sandwiches
Hey everyone! I’m feeling better again, still not 100% but so much closer, I’m excited to go to the gym tomorrow. I took another night off and I know I needed it, but I’ll be so happy when I’m able to workout at full capacity again. I’m sure tomorrow is going to be hard but it’s going to be so nice to get back in there.
Today I was in a really good when I got to work. The sun was shining it was in the 50’s, I was feeling better, and then I got to work, everyone seemed to be in a bad mood today. The clouds quickly rolled in with drizzles here and there, and the temperature dropped down to 35*. But it’s Thursday so I was trying not to let everyone else’s moods affect my attitude for the day. It’s hard trying to be positive when everyone else was so negative, but I know that tomorrow everyone will be happy it’s Friday, as will I. I mean you get to wear jeans to work tomorrow. Things don’t get much better then that right? Ha.
So I started out the morning with a blueberry Chobani. I still think this isn’t the best flavor, I’ll stick to plain, vanilla, and peach from now on, but I’m glad I was able to find this in the store and try it. I also had 2 clementines on the side.
All I wanted today for lunch was pb on a bagel, I settled for 1/2 a bagel with lots of fruit on the side. I had grapes, blueberries, and 2 prunes to go along with my peanut buttery bagel.
Yum!
I still don’t have my full appetite back so there was no snacking in between meals, but my mom texted me this afternoon to ask if Andrew and I wanted to go to one of the local diners for dinner. If you’ve been to or are from NJ you know that diners are every 1/2 mile on the highways. If you’re from Jersey I’d bet you spent many countless hours at a table in a diner, just drinking coffee or eating pork roll, egg, and cheese on a hard roll (ewww not me though, I’ve always loathed pork roll). I’d even go so far as to guess you’ve gone to a diner after at least one homecoming or school dance all dressed up with a big group of friends. Yeah, we really love diners in Jersey. At a diner you can get anything, Italian food, Greek gyros, Mexican food, and of course breakfast 24 hours a day. Or if you go to my local diner you can get a “Fat Sandwich.” Intrigued? Here’s the selection of Fat Sandwiches at the diner tonight.
All those ingredients are on one Sub roll. So if you order a Fat Flo you’d get a sub roll with chicken fingers, mozzarella sticks, french fries and marinara sauce all stuffed on there. Or perhaps you’re very hungry and that’s not enough. May I suggest a Fat Manny, which is cheese steak, eggs, pork roll, lettuce, tomato, mayo, and ketchup all on a long roll.
I ordered a Fat Nancy.
I’m kidding of course. My order was not on the “Fat Cat” portion of the menu. I got a veggie wrap which included grilled eggplant and zucchini, spinach, tomatoes, romaine lettuce, carrots, red onions, and mozzarella cheese, with balsamic dressing on the side.
It came with french fries, but Andrew’s meal came with home fries so I gave him all my fries for 1/2 of his home fries. Delicious. I ate one 1/2 the wrap and then picked the eggplant off the other half and just ate that, and I also ate almost all of the home fries.
Oh and my dad got a greek salad with his entree so I gladly ate some of that as well.

I ate less then a 1/4 of his salad, mostly just picked out all his onions and ate those.
So there you have it, a typical night at a Jersey Diner, hope you enjoyed yourselves!

I Got It
Well I finally caught the cold that’s been going around the office. It hit me around 3 today so I’m going to do a really quick post, I’m drinking a hot glass of theraflu and then have some emergen-c that I’m going to drink. I’m not going to let this cold get me down.
My eats were extremely boring, probably because I didn’t have much of an appetite.
For breakfast I had overnight oats with blueberries, dried crans, and pb.
I swear there’s oats under there.
I didn’t have much of an appetite but felt a little tired so I had 3 of my cappachino coated coffee beans!
I can not describe just how amazing these taste!
For lunch I brought my left over raviloli from V-day dinner, as well as several of the penne Andrew had left over from that dinner as well.
Messy but oh so good, I ate about 3/4’s of this.
Around 3 I got that sicky, achey, tired feeling so I didn’t snack on anything. Once I got home I had some Wolfgang Puck Organic French Onion Soup.
I put a little less then an ounce of part skim mozzarella on top. And popped it in the broiler.
Perhaps my tastebuds are screwy from feeling sick but seriously this soup was nasty, it tasted super sweet, like a fake sugary taste and you could totally tell it came out of a can, I ate maybe a 1/4 of this before I chucked it. Thanks, but no Thanks creepy Wolfgang Puck, keep your french onion soup to yourself. I just tried to draw a pervy mustache on him but I don’t have the energy to put it into paint and repost it. Just picture it yourself, funny right?
Since I wasn’t hungry at all I decided to have 1/2 an arnold sandwich thin with pb.
This tasted great and although I wasn’t hungry I’m glad I ate something.
Well I’m off to bed, sorry for such a crappy post, I’m hoping this Theraflu and emergen-c as well as plenty of rest will knock this cold right out of me. Although working from home is always an option, I know that I have a lot of work to do that can’t be done from home so I’m planning on going in for at least a little while, if not the whole day.
I hope you are all having a better Monday then me! Although I’m glad it’s not another sinus head ache at least when it is I know it, and can take some sinus medication, a cold is so hard to shake sometimes.
Looks like a rather blustery day today
Does anyone else remember that song from Winnie the pooh, the one with the windy blustery day? That sure does fit here. We’ve had wind gusts up to 50 mph! I hope you all stayed safe out there if you had some strong winds like we did. The weird thing is, it was still pretty warm, I didn’t even need a coat when I went out at lunchtime today.
I got my gift from my secret cupid today! Oh my gosh you would not believe the goodies I got! But lets quickly go over my eats for the day so I can share my incredible package with you guys!
In my typical Thursday fashion I forgot my camera! What is the deal? I’m pretty sure I’ve forgotten it close to every Thursday since I started this blog, it’s pretty ridiculous but kind of expected at this point.
Breakfast was overnight oats, with 3/4 of a banana, 1/2 a cup oats, 1/2 a cup skim milk, 1 tbsp water, cinnamon and vanilla extract. I also added blueberries as a topping.
Delicious!
For lunch I had 1/2 of my leftover chicken from last night in a salad with romaine and cucs.
I also had some grapes! I can’t get enough of them right now!
Very unlike me but I had sweets again this week, my boss is on a baking kick. She’s my boss so I can’t really turn down sweets right? I had one oatmeal raisin cookie, it was pretty small but it was good.
I didn’t feel like cooking so Andrew and I went out for lunch today, we went to a restaurant down the street from our apartment, I got the grilled chicken sandwich with mozzarella cheese, it was good, but not something I would get often. The best part was definitely the roll, it was a potato roll of some sort. It came with chips on the side that were made in the restaurant, they were similar to kettle chips and I had more then a few.
Now on to the fun stuff! My secret cupid turned out to be Ellie of Inside I’m Still Dancing. She commented on one of my posts a few days ago and I began reading her blog. She is a wonderful person and I was so happy and grateful to receive her gifts. And she’s from Scotland so all these goodies came a long way! I love blogging for who it’s introduced me to, I mean it connected me to someone in Scotland and that’s amazing!
First look at this beautiful card she sent. Inside was a handwritten message as well as some great quotes. Such as:
“Happiness is a gift you can give yourself.”
and
“Don’t let one mess-up make you think you’re rubbish. Acknowledge the glitch and move on. As you start again, say, ‘Bring it on – I’m ready!’”
After my not so successful attempt at a healthy dinner I was really beating myself up, this message came just in time and it made me feel so much better. Perfect timing Ellie.
And she wrapped all the presents in pretty red wrapping paper!

I got cappachino coated coffee beans which I wanted to rip open instantly, but I’m extremely sensitive to caffeine and can’t have it after like 7 on a weekday, so I decided to wait until tomorrow. I can’t wait though!
I also got “Flying Saucers” which are “sherbet filled candy shapes.”
I had to try one of these right away. Here’s the outside.
And here’s the inside. I can’t explain the taste but it was so good! The outside just melted away and the inside was the sweet/slightly sour taste. It was delicious and a lot of fun to eat.
I also received a cute pair of heart socks which I can’t wait to wear!
Ellie also sent me Suma Square Soap. It smells delicious, I will definitely be using this tomorrow morning in the shower.
And lastly she sent me a bag of Cacao nibs which are organic raw. It is described on the package as:
“Outrageously nutritious… five times more antioxidants than any other food..Pure vibrant and genuinely raw, these nibs (small pieces of cacao bean) nourish body mind and emotion.”
How awesome is that?
I had to try a couple pieces of this as well just to see what the taste was like. It was really good and I can’t wait to try mixing it with oatmeal!

I know yesterday I asked for recommendations for places to eat in Inner Harbor for the weekend and Ashley offered to help us find somewhere to eat. Unfortunately we won’t be going, I have a few things I need to spend some money on that I completely forgot, (ie I have to put a deposit down on my dress for my cousin’s wedding this weekend) as well as my usual bills. So we’ll be kicking it at home for V-day I’m sure we’ll be able to find something fun to do locally though. Thanks for your help though Ashley, maybe we’ll be able to head that way soon though and you can recommend somewhere.

If You Seek Amy’s Dinner
Thank you for all “feel better” wishes. I woke up feeling a whole lot better this morning. And although the sinus pressure is still there atleast today was bearable. I’ll have to see what happens when the temperature shoots up to 60 tomorrow.
I finally found blueberry Chobani at my local food store, typically they only carry, plain, vanilla, and occasionally peach. This time they were all in stock. I mixed in a 1/4 cup of Bear Naked Fruit & Nut Granola. It was so delicious, although I think peach is still my favorite fruit flavor.
Before lunch I got hungry but wanted something chocolatey if you know me at all that’s a big surprise, it is so rare that I crave anything chocolate. I know I don’t have it often so I have no problem indulging in chocolate when I do want it. Luckily my boss is a chocolate fiend and always has some for me to steal when the mood strikes.
Orange M&M’s are my favorite, I know I know they all taste the same, but oh well, I’d pick an orange over any other color. : )
Lunch was a bagel with pb. I’m in a serious lunch time rut. I need to have something different but I just love this combo. I’m going to try to think of something different to have tomorrow.
On the side I also had a gala apple.
For dinner tonight I didn’t feel like coming home to an empty house again, while Andrew was at work until 9 at the pharmacy, so I called my mom to see what they were having for dinner. They were having left over stuffed peppers and there was only enough for my parents. So I stopped off at the store and grabbed some much needed produce, and an Amy’s Shepherd Pie. Thus the corny name of this post.
Can Amy’s do anything wrong?! This was as delicious as everything else of the brand, that I have tried.
They may not look appetizing, but seriously it was delicious!
On the side I had a blurry romaine salad.
Any my mom’s a real weirdo and like stuffed peppers but doesn’t like to eat the peppers. So I happily took her empty pepper and ate it myself.
Well it seems that I’m posting later and later these days. I’m going to lay down and read my Shape magazine that I bought today. Hope you all have a great night and thanks again for the sweet and wonderful comments yesterday, you guys are all so sweet!
Come on Spring!
I am so sick of winter! When I was leaving for work this morning at 7:30 it was already snowing. It’s still knowing now, almost 13 hours later, and we have about 6 inches. That’s more then we’ve had in the past few years. I’m a big baby when it comes to driving in the snow, so needless to say my commute home was awful.
Atleast my food today was all delicious.
For breakfast I had “overnight oats” I used 1/2 a cup of oats, 1/2 a cup of milk, 1 tbsp of water. I mixed it all together with cinnamon, and vanilla extract and then popped it in the fridge until I left this morning. Once I got to work I mixed in 1/2 mushed up banana and mixed that in the oats. I threw it in the microwave for 1 minute 30 seconds. It was perfect and dare I say even better then my oats Sunday morning? No wonder you all love this so much.
Right before I ate it I mixed in 1 tbsp on pb and the last of my blueberries.
Spoiler alert: I already threw some overnight oats in the fridge and will have something super similar tomorrow.
This stuck with me all the way through to lunch. For lunch I had a string cheese, spinach salad, and 2 clementines.

Around 3 I had a snack of grapes and some pistachios.
As I already said my ride home was awful here are some pictures I snapped while waiting at lights.

I had every intention of going to the gym but I was braving the roads again. I decided to make ahead as much as I could for the rest of the week considering I was stuck at home.
Busy kitchen!
For tonight’s dinner I made Lasagna roll-ups. I originally got the idea from The Cooking Light Cookbook. In my roll-ups I mixed cooked green bell peppers, onions, and garlic with 1/2 a cup of ricotta. Then put about a tablespoon of filling on the end of a lasagna noodle rolled it up and covered it with sauce, put it in the oven for 10 minutes and then sprinkled mozzarella cheese on them.
I made 8 in total but here are my 2 from dinner
I had a salad on the side as well.
Yummy dinner and I have leftovers. I also have all my food for tomorrow packed so now it’s time for me to wait for Andrew to get home from work and then go to bed. What a long snowy day.
