Italian Food Overload

Monday is over! Thank goodness!  I have a lot to look forward to so it’s making this week drag.  I’m just ready for it to be over already!  Starting Thursday at 5 I’m on vacation for 10 days!  Unfortunately it’s a mandatory furlough where I won’t be getting paid for the 4 working days but hopefully I’ll be able to claim unemployment.  As luck would have it Andrew has all those days off except 2 with me.  He’s on vacation from school for 2 weeks and the summer program starts next Wednesday so he’ll work Wednesday and Thursday and then have off for one of my favorite holidays, the 4th of July.  Let’s just hope it feels like summer!  This weekend I also have a very exciting camping trip planned with my 2 girlfriends and their boyfriends.  It should be a great time!

This weekend flew by, and I had a lot of family things to do for Father’s Day, plus looking at more wedding locations.  I think we found one that we both absolutely love and we’re taking our moms there on Friday for their opinion.  I have a feeling they are going to love it, once we make our final decision I’ll be sure to share it with you.

So if you’ve been reading my blog for a while you’ll know I’m not a fan of sweets, you’ll hardly see chocolate or cake, but I’m a big fan of Italian food.  It’s my weakness, a nice big dish of pasta, or a slice of pizza are my weaknesses.  And in today’s post your going to see a lot of Italian food.

First off let me start with last night’s fabulous Father’s Day dinner that my dad selected and my mother cooked.  She was a little upset I hadn’t posted it last night so here you go Mom.  Happy now?

My mother makes THE best chicken parm.  It was so tender you didn’t even need a knife and it was overall perfect.

Wagon Wheels!

This was absolutely perfect, thank God it’s not Father’s Day everyday though because I would seriously gain all the weight I’ve lost this year plus some, if this was an everyday option.

Now on to today.  My breakfast of choice lately has been pb on a sandwich thin.  I have no idea why, I’ve just been craving that peanut butter a lot lately.  It seems to be the only thing I want in the morning.  Unfortunately I didn’t take have my camera today, but here’s the same picture from last week.

For lunch today I leftovers from the weekend.  I had gotten an eggplant, fresh mozzarella, and roasted red pepper sandwich.  I had a 1/4 left and brought that in for lunch today.  These pictures are from the first time I ate it over the weekend.

Dinner tonight carried on my theme of Italian food.  I had made a very lean meat sauce over the weekend and had some leftovers for dinner.  I’ll be posting the recipe for the sauce this weekend, so stay tuned, it’s really very good and actually super simple.

I actually had dessert tonight as well.  I had a container of Fro Yo in the freezer that was about to expire.  Never one to waste food I happily ate  a small serving with some chocolate syrup.

Summer In The City

I had such a great day yesterday!  The weather was beautiful I got to hang out with 2 amazing girls and then have a barbeque at my parents.  Really can it get much better?  I have a ton of pictures to share and want to get back outside to enjoy this summery day as well so I’m just going to jump right into the recap of yesterday.

I woke up early and ate a container of Peach Chobani.

While reading some blogs, then it was time to start getting ready.  I showered got dressed and ran out the door, I had the train times all mixed up and kept thinking I was catching a 10:07 but was actually taking the 10:23, the trains run every hour on the weekends on the 23’s to the city and the 07’s are the way home from the city.  Silly mistake but I got there with plenty of time to spare.  The train was so crowded because there was a Mets game yesterday at 1 so my train was packed and I got the worst seat you could get, all the way in the back of one of the cars with no window to look out of, made for a boring ride, but I used the time to listen to one of Jillian Michael’s podcasts, that made the train ride fly by.

Once my train pulled into Penn Station I met Vani and Sarah who sweetly met me right in the station since I would never have been able to find my way to PB & Co.  It was so nice of them and I can’t thank them enough, it was nice stepping off the train and seeing 2 friendly faces right away.  We walked about 30 blocks and the weather was absolutely gorgeous, perfect day to walk around.  We talked on the way about blogs and fitness of course!

Pb & Co was adorable!  I got the special sandwich of the week called the Pina Colada, it was their smooth operator pb, with pineapple jam, and coconut on wheat bread.  It was supposed to come with Cream Cheese but I’ve never liked that so I had it left off.  The sandwich was delicious!

I’ve never seen pineapple jam in the store before but now I’m determined to find it.

I also had some of Vani’s sampler platter it came with all of 8 of their pb’s and fun dippers of celery, carrots, apples, and melba toast crackers.  I tried the dark chocolate dream (which Vani correctly compared to pb chocolate frosting) and the White Chocolate wonderful.

After lunch the girls lead me to a Tasti-D-Lite because everytime somebody posts something from there my mouth waters, and I don’t have any near me.  I sampled a pb flavor.

After dessert Sarah and Vani crossed the street to get bubble tea which I sampled some of.  I thought it was very tasty but so weird!  I don’t know what it is but today I have a craving for some.  Weird right?  They told me it was like crack I should have believed them!  Here’s a picture of the 3 of us, me with my dessert and Sarah and Vani with their bubble tea.

After a pit stop at CVS for Sarah,  (How are your feet today?)  we walked down to the Union Square Greenmarket. I didn’t take any pictures but Sarah did so check out her recap.  I did sample a few of the goods as well.

After our trip through the market Sarah and Vani once again escorted me to Penn Station!  I can’t thank them enough for being so kind as to come meet me there and taking me back!  I was sad our day was over but hopefully we’ll get together soon, I hope to take them to one of the beaches around here when they get the chance to come to NJ.  One thing I can say about the bloggers I’ve met so far is they are all really sweet and very fun people to spend time with!

On the train ride home I ate the potato chips I got at PB and Co.

After my train ride home I met Andrew at my parents house for a little barbeque after my hot walk around the city and a long day of train rides I decided to indulge in a little alcoholic beverage.

Does it get any better then a cold cider after a warm summer day?  God I wish I could drink beer though once summer comes around.

After spending some time in the sun the past few days I’m finally starting to see some color, check out my arm next to pale sister’s.

After dinner Andrew, my dad, and I ran to Lowes to pick out some plants, which we’ll be planting later today, I’ll be sure to take some pictures.

Today on our agenda we have taking a walk down by the bay, going to Andrew’s grandma’s house to celebrate her birthday, then spray painting some of our deck furniture, washing our cars, and another bbq at my parents house.  Plus some errands thrown in there along the way I’m sure.

Easter Eve

I loved Easter as a child, dying the Easter Eggs, watching The 10 Commandments, waking up to find the Easter eggs hidden around the house, and all the goodies in my Easter basket!  I still love Easter and although I didn’t dye any Easter eggs tonight I am watching The Ten Commandments with Andrew.  I want to get back to the movie so I’m going to get right to the eats.

After my post yesterday we accomplished almost everything on the list done.  A few things got pushed aside to another day but we got so much accomplished I don’t mind one bit.  For dinner I made pizza, with a boboli whole wheat crust.  I used sauce, mozzarella cheese and spinach.

I put the spinach under the cheese and I think it tasted great, there was a ton though that you can’t really see.  After dinner we showered and got ready to go out with some friends to a local Irish Bar.  I stuck to water all night though.

It was pouring this morning and I wound up sleeping until 8:30, we got up and went to Costco with my dad to pick up a few things.  On the way to my parents house I had a chocolate brownie zbar.

After Costco I had to go to the chiropractor.  Once we returned to my parents house we hung out with my sister while my parents went shopping.  I had a honey ww bagel with some pb.

My mom gave me the last of the baked ziti from the other night so after we came back to the apartment I had that for dinner.

My batteries were going dead so this picture came out blurry sorry. 

While watching The Ten Commandents I decided to have dessert.  I had vanilla fro yo with chocolate chips and pb!  It was so yummy!

I melted 1 tbsp of pb in the microwave then poured in on top of the fro yo and then placed in back in the freezer to become like a shell on it.  My friend and I used to do this in high school all the time, it’s a super yummy treat.

Well I’m going to get back to the movie!  I’m very excited for tomorrow because not only is it Easter but I get to eat meat again.  I’ll talk more about my experience of giving up meat for lent tomorrow, I am definitely glad I did it, but I’m excited to have some turkey bacon for breakfast tomorrow.

Breakfast, Brunch, and Brinner

Every meal I ate today I would, or have already had, at some point for breakfast.  Breakfast is my favorite meal so it’s not weird that a whole day’s eats could be considered a breakfast food.  It’s a rainy gloomy day so I just stuck with my favorite foods for today.

For breakfast I had a delicious bowl of overnight oats. It contained 1/2 a cup oats, 1/2 a cup skim milk, cinnamon, and vanilla, with a scoop of pb on it of course.

As much as I love my yogurt and granola breakfasts, there’s nothing like oats to make you feel satisfied for hours.

Lunch I had a yogurt mess.  It contained 1/2 a cup pb puffins, 1/2 a cup organic apple cinnamon morning o’s (whole foods brand), 1/2 a mango, green grapes, a banana, and of course a Vanilla Chobani.

It doesn’t look good at all does it?  But it was delicious, it took me forever to eat.  It was a really great lunch and something I will probably have again very soon.

For a snack around 3 I had an McIntosh apple.

I was craving eggs for dinner so I decided to just have that and make it a day of breakfast food.  I had 2 eggs scrambled with lots of spinach, and a less then an ounce of Mexican blend cheese.

On the side I had Dr. Prager’s Potato Littles, they are obviously supposed to be for kids, but I like my food in fun shapes sometimes too!

After dinner we caught up on some things on our DVR, including last night’s Biggest Loser and Lost.  No Lost spoiler or anything but seriously, WTF is going on?  So confusing!

While watching TV I decided to enjoy a serving of fro yo with some chocolate chips.

I’ve had a ton of sweets this week, a piece of chocolate birthday cake, and Ice cream cake Monday, Tagalongs yesterday, and Fro yo today.  I know most of you allow yourself to have something for dessert each night, but it’s so weird to me that I’ve been craving sweets.  As I’ve said many times I don’t have sweet tooth at all so to have this many sweets in a week is pretty unheard of for me.  At least I’m keeping my portions small.

Well tomorrow is Friday!  I’m so happy that this week is almost over, just one more day.  I have no definite plans but some of my friends were in Savannah last week so I’ll probably be seeing them this weekend.  What are you doing this weekend? Anything exciting?

Happy St. Patrick’s Day!

I hope you all had a fun St. Patrick’s day!  I completely forgot to wear green today, but luckily nobody pinched me!  I had a pretty busy day at work which made the day fly by.  I’m happy tomorrow is Wednesday because I’m pretty excited about the weekend and can’t wait for it to get here.  3 more days!

For breakfast today I enjoyed a Fage 2% with honey, I’m not the biggest honey fan, so I used less then a 1/4 of what was given to me.  But I did mix my usual granola in there.

Around 11 someone at work offered me some Sunchips, apparently someone must have tried to purchase it from the vending machine but it got stuck so when she went to buy them she got 2 bags.  I haven’t had Sunchips in probably a year, so I was not about to turn down a free bag.

For lunch I had an old favorite, peanut butter and raspberry preserves on Arnolds Double Fiber bread.

For dinner I didn’t know what I wanted, I had bought some irish soda bread while food shopping over the weekend so I knew that needed to be a part of my meal tonight.  While I was deciding I decided to snack on something green outside in the sunshine.  It was of course another one of my favorite pickles.

I got a couple questions about what kind of pickles they are.  First off these are by far the freshest pickles in the world.   They are Ba-Tampte Half Sour Pickles, but the website doesn’t give much information.  I know they are from New York and I also know it’s not always common to find them so bright green they do start to look more pickle-y after a few days (but they typically don’t last long in my house)  it’s like biting into a fresh cucumber.   I wish I could invite all you pickle lovers to my house and let you sample them.  Last summer I went through so many jars, and always offered them to my friends, everyone has agreed these are the best pickles ever.  When they are this fresh they don’t taste sour or even half sour at all, that flavor comes on once the pickles sit around for a few days.  I do know they have no preservatives and have only all natural ingredients.  The sodium content is high but no higher then other pickles on the market as far as I can tell.  They are in the refrigerated section of the store, hope that will help some of you find it!

Finally I decided to have “green” eggs, roasted potatoes, and my irish soda bread serving as the toast.  I figured potatoes and anything green would make it in an Irish meal.  I’ve never liked corned beef so even though I couldn’t have had it since I gave up meat for Lent, I really wasn’t missing it at all.

Andrew didn’t go into his second job today because his allergies are driving him nuts so together we watched some TV and I snacked on a little more then a serving on Fro yo (that I never wound up having last night) with some chocolate chips and  less that a tablespoon of pb.  Such a great combo!

Drained

Thanks for being so understanding about last night’s crappy post.  I don’t know what’s wrong with me lately, I just feel physically drained, I’d love to blame it on Daylight Savings Time but I’m getting the same amount of sleep most nights, the other night I had a restless night but surely I must have made that up by now.  I just feel like from the moment I get up to the moment I lay down I’m constantly going.  This Saturday I will make the time to go to the gym at some point but other then that I am having a me day, I have some of ideas of what it will include, but suggestions are welcome.  When you want to treat yourself what’s your favorite thing to do?

I’m going to make this post quick as well so I can get into bed and get another full nights sleep.

For breakfast today I had a 2% Plain Fage yogurt with peak protein granola.

I’ve loved all the Fage yogurt I’ve received but for plain I definitely prefer the 0%. Flavored 2%’s are fine but I really like the 0% better.

A little before lunch I got hungry so I snacked on what was supposed to be a part of lunch.  Some grapes that were on their way out, I had toss quite a few of them.

For lunch I had a pb and raspberry preserve sandwich on an Arnold Thin.

Around 3:30 I got hungry again, and I wanted popcorn, so I took a single serving size 100 calorie bag to one of the microwaves, within in a minute it smelled like burning so I took it out, more then half of those little kernels didn’t pop, and about 1/2 of the ones that did pop were burnt, disappointing to say the least.

Such was my day.

For dinner I made tacos with the MorningStar Veggie crumbles, the texture took some getting used to but it was really good, I put the taco “meat” over a bed of romaine, 4 mini sweet peppers, taco cheese, and some onion, for dressing I used taco sauce.

A little while after dinner we got ready to go to the gym but stopped by my parents house to see their new couch, very nice and comfortable, I see many naps on that couch in my future.  As we were leaving Andrew found some soft pretzel he had left from school, I gladly took a piece from him.

The gym sucked, I just don’t have the energy, I did as much as I could on the treadmill, and then accidentally punched it, I pushed the emergency stop button, and waited for the pain to go away, then restarted it, then I realized how crappy I felt and how I did not want to be there, and instead of pushing through I freaking gave up.  I feel like I’m getting upset ofverstupid stuff lately and I need to calm the heck down.  I should have stuck it out, but I got too upset over something stupid and decided to leave.  Tomorrow WILL be a better day at the gym.

So after we came home I decided to crack open a container of fro yo that’s been in my freezer for over a month, just haven’t been in the mood for it lately.  But tonight the craving was there and I gave into it.  I had a serving of the frozen yogurt and some chocolate chips on top.  Heavenly.
