89 Degrees

Not outside, the outside temperature at 3PM today was 97 degrees.  The 89 degrees refers to the temperature it was in my apartment when I got home.  Luckily it’s a small apartment and cools down really quickly.  But it’s definitely not fun to come home to.  This humidity is making me feel sluggish and making my sinuses hurt horribly.  I’m waiting to take some medicine until just before bed time because it’s a night time/sleep aide/decongestant, and I want to make sure I’m able to take it and sleep through the night.  Otherwise the second it wears off I’m wide awake.

The weather seemed perfect when I left for work this morning, no humidity, a nice breeze, probably only 78 or 80, it was a pleasent ride in to work with the windows down.  I can’t tell you how excited I was for today’s breakfast.  Look what I was finally able to fine in a local store!

Pomegranate Chobani! I knew I was a dork when I was food shopping yesterday and announced to Andrew it was the best day in my life while loading up the cart with the new flavored Chobani.

I mixed it with some Kashi Island Vanilla.

Just organic apples and I guess some added vitamin C.  Unsweetened applesauce is so delicious!  Definitely a delicious side.

I also brought a plum but wound up not eating that until around 3:30 when I got snacky.

So once I got home I let the house cool down while I made a refreshing salad.  With only the BIGGEST cucumber I’ve ever seen!

When standing on the counter it rested a good 4 inches above the bottom of my cabinets.  I got this cuc from a co-worker, fresh from her garden.  Expect to see a lot of cucumber in the coming days!

I barely made a dent in it and had some over romaine lettuce.

Perfect for a hot muggy day.

While perusing blogs today I saw some cheesy garlic bread (I forget on which blog) but it looked amazing and I decided to recreate some at home.

I used a hot dog roll, a small amount of (REAL) butter, garlic powder, and a 2% milk string cheese, with some cheddar also sprinkled on.  It was absolutely perfect, and tasted a lot like cheesey bread you’d get at a restaurant, and it was definitely healthier because it wasn’t greasy at all.

I’m really bad at blogging over the weekends, but I can’t wait to share some pictures with you all of a baseball game I went to on Friday, unfortunately I forgot my camera so I have to get them from my friend Jess tomorrow or hopefully soon.

Well I don’t have the A/C on in the office so I’m getting really hot sitting here, hope you all have a great night and stay cool!

Uh Oh…

This is my first experience with drogging, is that what we’re calling it? Caitlin? Maybe you can answer, because my hiccups might be preventing me from looking up the proper verbage. That’s not a word? Oh well.

For breakfast today in order to keep myself on schedule I had 2 waffles.  They were good but the syrup was better.  I had whatever I had left of the sugar free syrup on my whole grain Van’s waffles.

For lunch I had a pb and raspberry jam sandwich.  I apparently did not take a picture, although I swore I did.  Here’s what Google Image Search turned up.  Enjoy!

It was some kind of Fiesta,   Of that I’m sure, but I’m not sure the name of it.

I ate half of that salad without any of the dressing, I”m saving the rest for tomorrow.  I totally ate the rest of that roll though.

And that’s about it, I didn’t eat anything else.  But I did enjoy a finely aged box of wine from my dad.  Yikes.

Thank You!

First of all I can’t believe that you all took the time to write such heartfelt comments yesterday!  I knew that venting on here would make me feel better and your comments were amazing.  I was literally tearing up just reading your super sweet words.  I knew I could count on you guys to make everything seem better.

I’m sorry I didn’t get to post again last night I just needed to sit and think for a while.  Everything is definitely looking up I realized I do have enough vacation days to cover 12 of the days off.  Every time I get paid I automatically have money removed from my checking account into my savings if I put that on hold for the next few months, I will only be down $79 from what I usually get.  Obviously I’d rather save but if I just save what I can instead of a set amount I’ll be a lot better off then I thought.  I also have started looking into freelance work and other small jobs to keep my cash flow up.  The only thing now is I don’t feel comfortable signing another 1 year lease in case in 6 months things aren’t looking up, when I paid rent today I sent a little note asking my landlords to call me.  Since I’ve lived here for the past 2 years I have never had any kind of trouble with the landlords and have always paid on time.  So I was going to explain my situation and hope that they will let me do the lease on a month to month basis until I get back to full time.  I really see them saying yes, they know Andrew and I and really seem to like us, and I’m sure they’d rather have our money coming in instead of having the place empty.  They live right below us so we have really gotten to know them, and it’s not some big apartment complex but their home so I think we might have a really good chance.

Now since this is a food blog let’s talk about my eats.

Before going to my mom’s yesterday I had a string cheese.

While I was there after talking to my mom about everything I fell asleep on the couch for a few hours!  Nothing like a nap to put you in a better mood.  I left their house and came home for dinner.  First off look at this amazing plate!

How cute right?  My friend, Michelle, gave it to me for my birthday, she got it while on vacation is Savannah.  It was actually designed by a student at SCAD (Savannah College of Art and Design)  such a fun gift!

So I of course had to have a pb and j sandwich on it for it’s first use.

This morning upon waking up I knew today was going to another tough day.  I decided to keep my eats really simple since I didn’t spend anytime preparing them last night.  Let’s just say there was plenty more pb.

For breakfast I had a peach Chobani and granola.

I ate this so incredibly fast because my boss asked me to run home to grab some papers from when I worked at home 3 weeks ago.  That took a nice hour and a 1/2 out of the work day for me. 

For lunch I had pb and banana on an arnold’s sandwich thin.

After work today I had to drop Andrew off at the pharmacy to work his second shift and I had to go get another MRI of my back to make sure it’s healing nicely from my accident last summer.   Before I left work I knew I had to eat something because I didn’t think I’d be able to eat for a while (I was right.)   So I had a Chocolate Brownie Clif Bar.

Brownies are like the only sweet that I can NEVER turn down.  Growing up when it was your birthday you would bring cupcakes or munchkins to share with your class to celebrate.  I never liked either one of those things so I would make my mom bake brownies the night before for me to bring in.  All the teachers loved my birthday because it was something different.  I remember proudly walking around passing out the brownies and listening to everyone get excited because it wasn’t the same old thing.  Another year for my first non-family birthday party my mom asked me what I wanted to have at my party, knowing I wouldn’t cake, I asked her to make Jell-o.  What little kid does that?  She wound up making jell-o jigglers that spelled out Happy birthday Danielle!  What a weird thing to have instead of cake!

This clif bar did not taste like a brownie but it was good none-the-less.

I was so glad I ate because by the time I got out of the MRI and got home it was 7:30.  My parents had just finished eating dinner so even though I wasn’t that hungry I decided to have some of their left over egg noodles with a little butter, garlic powder, and parmesan cheese.

I wish I had only eaten 1/2 a clif bar so I could have had a better dinner.  But this tasted good no matter how many veggies are missing.

I also have been meaning to post this for a few days now.  The lovely Kate of Cooking with Kate has passed on an award to me.

First of all, have you all seen her blog?  She’s adorable, she’s a fantastic writer and she’s also a Jersey girl!  (Although she does live in LA now, believe me you can take the girl out of Jersey but you can’t take the Jersey out of the girl)  she went to the same beach club as Bon Jovi and Bruce!  (Remind me one day to tell you my Bon Jovi story it might be my most embarrassing moment!)  So definitely check out her blog!

When receiving this award you are supposed to list 7 things you love so here goes:

  1. My sister, she is the most important person in my life, she has really made me into the person I am today and I would do anything for her.
  2. My parents, everyone says they’re parents are the greatest, well mine really are, my mom has become one of my best friends who I can tell anything to and she always helps me out, and I will always be a Daddy’s Girl.
  3. Andrew, we went out in high school our junior year and broke up a few months later, we met up again when I was in my sophomore year of college and started going out again. I like to say we were high school sweet hearts even though there was a 2 year break in there. He is definitely my soulmate, and I’m so lucky to have him in my life.
  4. My friends.  I don’t know what I’d do without them, I’ve known my 4 closest girlfriends since elementary school!  We are a tight knit group, and I am very grateful to have them.  Once summer comes you’ll be seeing a ton more pictures of them because we’re always on our deck in the summer relaxing and talking.
  5. The beach, I’ve grown up less then 15 minutes from the beach, and there’s nothing like the feeling of the sand between your toes.
  6. You guys.  I can’t tell you enough how much your comments have impacted me, especially in the last few days!  You girls give me inspiration on a daily basis, you are some of the strongest women I (kinda) know.
  7. My extended family, aunts, uncles, grandparents, cousins, I have a pretty great family on both my mom’s side and my dad’s side, and there’s always a ton of laughs when we all get together.

Saturday Night Celebration

I just finished getting ready to go out and celebrate my 24th birthday, I wish it was my actual birthday but that’s not until Monday, I think it’s so much more fun going out on my actual birthday then before hand but oh well, there’s no way I’m going out on Monday night. 

Friends will be arriving in 15 minutes so I need to rush this post out.  I didn’t get to post yesterday because I was asked to work from home this weekend for some overtime.  I can’t turn down extra money but I had such a busy weekend planned I needed to get it all done last night.  I wound up working from when I got home until after midnight.  But I got some extra money and the rest of the weekend was not interrupted by work.

Friday Breakfast after my oats Thursday morning I knew I wanted them again on Friday, it was 1/2 a cup oats, 1/2 a cup skim milk, cinnamon, vanilla, and pb.

For lunch I took the easy way out and brought an Amy’s Santa Fe Bowl.  Not the best looking lunch but it was good, and filling I only wound up eating 3/4 of it.

On our way home from work Andrew and I decided to just go right to Harborside grille for dinner.  I did not feel like cooking and wanted a little more time out of the house before I was glued in front of the computer screen.

I got a house salad to start with balsamic dressing on the side.

For dinner there weren’t many meatless options but once I saw thin crust pizza, I was sold on that idea.

It was on either Lavash bread or something very similar, it was so good.  That’s really the only good picture I got the rest were blurry, but it was just a normal size personal size pizza, and I ate it all.

Then it was time to work, I couldn’t believe I was up so late on Friday doing work, what a boring Friday night right?

I woke up bright and early this morning and the weather was so deceiving, it snowed yesterday morning, and I had heard the weekend was supposed to be nice, with all the sun pouring in I thought it would definitely be warm out, unfortunately it hovered under 50 pretty much all day.  I got back into bed and read for a couple hours.

By the time I got around to eating I decided to make it a brunch and had pb and raspberry preserves on double fiber bread.

Before going to the gym a little later I decided to snack on a pickle, I only have one more left in the jar.  So sad.

After the gym my sister called and asked me to stop by to hang out, so we stopped by there and watched TV.  Then it was time to go home and eat and clean.  I wanted something I could cook in less then 5 minutes, in the fridge we had leftover pasta from the other night so I made a Bolognese sauce with jarred sauce and morning star veggie crumbles.  Delicious!

Then it was time to start getting ready, I’m trying to convince Andrew to give me my presents tonight.  He kept telling me no, but then he left the burner on the stove on and melted my silicone colander into one of my pots.  He felt pretty guilty and then told me he’d give me my presents tonight, but he salvaged both items and now I’m not sure he feels guilty enough to give in to me.   Oh well it’ll only be 2 days if I have to wait.

Happy St. Patrick’s Day!

I hope you all had a fun St. Patrick’s day!  I completely forgot to wear green today, but luckily nobody pinched me!  I had a pretty busy day at work which made the day fly by.  I’m happy tomorrow is Wednesday because I’m pretty excited about the weekend and can’t wait for it to get here.  3 more days!

For breakfast today I enjoyed a Fage 2% with honey, I’m not the biggest honey fan, so I used less then a 1/4 of what was given to me.  But I did mix my usual granola in there.

Around 11 someone at work offered me some Sunchips, apparently someone must have tried to purchase it from the vending machine but it got stuck so when she went to buy them she got 2 bags.  I haven’t had Sunchips in probably a year, so I was not about to turn down a free bag.

For lunch I had an old favorite, peanut butter and raspberry preserves on Arnolds Double Fiber bread.

For dinner I didn’t know what I wanted, I had bought some irish soda bread while food shopping over the weekend so I knew that needed to be a part of my meal tonight.  While I was deciding I decided to snack on something green outside in the sunshine.  It was of course another one of my favorite pickles.

I got a couple questions about what kind of pickles they are.  First off these are by far the freshest pickles in the world.   They are Ba-Tampte Half Sour Pickles, but the website doesn’t give much information.  I know they are from New York and I also know it’s not always common to find them so bright green they do start to look more pickle-y after a few days (but they typically don’t last long in my house)  it’s like biting into a fresh cucumber.   I wish I could invite all you pickle lovers to my house and let you sample them.  Last summer I went through so many jars, and always offered them to my friends, everyone has agreed these are the best pickles ever.  When they are this fresh they don’t taste sour or even half sour at all, that flavor comes on once the pickles sit around for a few days.  I do know they have no preservatives and have only all natural ingredients.  The sodium content is high but no higher then other pickles on the market as far as I can tell.  They are in the refrigerated section of the store, hope that will help some of you find it!

Finally I decided to have “green” eggs, roasted potatoes, and my irish soda bread serving as the toast.  I figured potatoes and anything green would make it in an Irish meal.  I’ve never liked corned beef so even though I couldn’t have had it since I gave up meat for Lent, I really wasn’t missing it at all.

Andrew didn’t go into his second job today because his allergies are driving him nuts so together we watched some TV and I snacked on a little more then a serving on Fro yo (that I never wound up having last night) with some chocolate chips and  less that a tablespoon of pb.  Such a great combo!

Braving the Snow

My gameplan was to not leave the house today, besides to clean off the cars.  I was content with staying inside all day reading, commenting, and relaxing.  But of course it didn’t go that way.  But more on that in a couple minutes.

After I finished posting we went out and cleaned off our cars and dug them out, with a little help from our township, they were coming around on tractors digging people’s cars out and plowing the driveways.  Pretty nice for us, but it was still a ton of work.  It took us 2 hours to get everything cleaned off.  I tried to take some pictures but the now just isn’t as pretty as last time, I think because it was so dark and cloudy out all day.

Once we came back in I made some hot chocolate and some lunch.  I had a peanut butter and raspberry preserve on a whole wheat wrap.

Danielle Crispy Fruit Chips.  I’m pretty sure it’s a rule if you’re name is on something you have to try it.  I’m so glad I did give it a try these were delicious!

They have a bunch of different flavors, but I went for my favorite fruit.  I highly highly recommend them, they’re a little pricey at 4 dollars a bag but really good, a great treat.

After lunch I logged on my computer and tried to catch up on some blogs and do some commenting, when Andrew came in to tell me our hot water heater is leaking.  Our landlord came up and told us he had to turn the water off, so we won’t have hot water until at least sometime tomorrow if he can get someone here to replace it.  So I had to run to my parents house to take a shower so that I could go in to work tomorrow.  What is typically at 10 minute drive took us over 1/2 an hour.  The roads here are a mess!  Ice and snow everywhere still.  I’m so nervous to go into work tomorrow, Andrew has a delayed opening and is working his other job in the evening so I can’t go with him, because I’d go in 2 hours late and have to leave 2 hours early.  I’m going to have to suck it up and get there somehow.  I already have anxiety thinking about my commute tomorrow morning.

Before we went to my parents though I through together a super quick dinner.   I’ve seen this brand before on other people’s blogs and decided to give it a try.

I followed the directions to cook, then added steamed broccoli and mini sweet peppers.  I ate a serving which is one third of the box.  It was really very good, and I’ll definitely be branching out and trying other things the brand has to offer, and buying this one again.

Well I’m going to try to relax for a little while before I get into bed.  I’m letting myself get to worked up about work tomorrow, I loaned someone else I work with my laptop on Friday so I don’t even have the option of working from home.  Okay I’m sorry, I’m being a major Debbie Downer right now, I’m sure some/most of you had to get to work today in all this snow, sorry to be complaining.  Good night everyone!  I promise to be in a better mood tomorrow!

I feel like a Pincushion

More on my not-so-good acupuncture experience in a minute. 

But first here are today’s eats.

I got my Chobani back!  It’s actually on sale this week so there was only one left, but I did get a rain check and will be heading back to the store to stock up while they’re 10 for 10.  Mixed into the plain yogurt I had more Bare Naked Peak Protein granola, I love that granola!

That’s my second to last clementine.  I need to make another trip to Whole Foods for some more, they’re the only place I can find them where 1/2 the box isn’t already rotten. 

Around 11:00 I got hungry so I had a small bag of pb puffins, I can’t get enough of the cereal.

After work and my acupuncture appointment I raced home to eat I was starving and I knew I needed fresh veggies so sorry about the repeat but it was another taco salad, this was included the same except instead of green peppers I had mini cucumbers.

It looks like a lot of meat but it was only 2.5 ounces.  I had a second bowl with another 1/2 an ounce and no cheese and a little less veggies.  Those veggies filled me right up and gave me exactly what I was craving.  I never thought I would crave fresh veggies, but I guess I’ll learn a lot of things about myself this year.

So my acupuncture appointment was not what I expected at all.   The doctor sat me in a chair and stuck about 12 needles in my neck and the back of my head, then 2 in my hands, and 2 in my feet.  It was weird but it didn’t hurt at all.  He told me he’d be back in 20 minutes to take the needles out and to just try to relax.  I sat in the chair and felt really calm, then about 12 minutes into everything started to sound muffled.  I told myself it was nothing and to just stick it out, after a few more minutes I started to feel nauseous, and I was really sweating.  I felt like I was going to either pass out or puke.  He had given me a bell to ring if anything happened. 

After a minute when the feeling didn’t pass and I actually felt worse I rang the bell.  He didn’t come, I rang it again, and again, and again, I think in total I rang the bell 8 times.  Finally the receptionist came in, she told me I looked awful and very pale.  I told her I was going to pass out so she got the doctor.  He came in and told me I looked greenish and was all sweaty, he took all the needles out and told me to lay down on the table.  He went to get me water and when he came back in he told me he had put too many needles in for my first time!  What!?  Why would he do that?!  He told me that it happens sometimes and that I just needed to relax.  He asked if I was scared of needles or if I had ever given blood, I told him I was scared, but I had given blood before.  I don’t think it had anything to do with being afraid of the needles because why would it happen 15 minutes later, not right away?

After I felt better and able to drive home I left, he made another appointment for me on Wednesday.  But I don’t know what to do.  Should I go?  My left hand hurts really bad right now and there’s a small amount of bruising where the needle was. 

 I need advice, should I try one more time, or call it quits on acupuncture?

Happy Friday!

Woo, we made it to the weekend!

I hope everyone’s Friday went by quickly.  Mine went fast until about 3 and then the minutes felt like hours!  But it feels so good to be home and be able to relax. 

Today’s eats were relatively boring. 

Breakfast was something different for the first time in a week.  I didn’t have any more Chobani so I settled for pb and raspberry preserves on an Arnold’s sandwich thin, and 2 clementines.

Yum, this definitely held me over until lunch.  I think I need to incorporate pb into my breakfast more often.

Lunch was another repeat.  I had the last of the chicken chili, and a gala apple.  It was good but it was no honeycrisp.  I wish I had bought more of them.

After this I went out for a walk and talked to my mom on the phone.  It didn’t last long because it was so cold!

My lunch did not do a great job of keeping me full.  I didn’t really expect to but I wanted to eat really light today because we had already planned out dinner.

Around 3:30 I had a snack of a peanut butter z bar, I had tried the brownie flavor a couple weeks ago but this was definitely better.

Dinner was so good, I was craving pizza since yesterday and we had some WW Boboli crusts.  So Andrew and I each made our own pizza and they came out really fantastic.

On mine I had:

  • more of the hot spaghetti sauce
  • 6 pieces of turkey pepperoni
  • green pepper
  • onion
  • and part skim mozzarella cheese

I ate the whole damn thing.  It was so good.

That was my first half, I definitely went back for the other 1/2.  It is a small pizza so I’m not that upset. 

Here’s Andrew’s pizza, it had:

  • boars head buffalo chicken
  • part skim mozz
  • mexican cheese blend
  • same sauce as me
  • and 3  pieces of turkey pepperoni.

I tried a bite, it was almost as good as mine.

Well I’m off to figure out whether I want to go out with friends tonight, have friends come here, or just get in my pj’s and read.  I have a feeling whatever I decide to do is not going to involve me leaving the house tonight.  It’s far too cold.

Leftover Stir-fry

What a long day!  Did anyone else have trouble getting up this morning?!  Mondays are always hard, but the first Monday after a long break is next to impossible.   

So I packed all my food up last night to bring with me for the day.  I knew I wasn’t going to have time this morning to get everything ready.  Thank god I did this because I wound up having to drive Andrew to work as well.  The tire on his car still hasn’t been fixed.   He works 2 jobs, one at a special education school which is right around the block from where I work, and at a pharmacy a couple days a week.  (I shouldn’t be complaining about a long day!)  He’s at work at the pharmacy now, and I’ll be leaving in a few to hang out at my parents (which is right around the block from his pharmacy) until he gets out at 9. 

My breakfast this morning was delish.  It was another vanilla chobani, with bear naked pure protein granola (my favorite of the ones I’ve tried), and a few pb puffins.  Alongside that I had my morning coffee and a clementine.

Around 11 I got snacky and had the remainder of the puffins.

I didn’t really need them but oh well better then running to the vending machine.

For lunch Andrew made me a flat out multigrain wrap with pb and raspberry preserves.  Whatta guy right?

Weird combo I know, but a few years ago I was a nanny and one of the girls loved this.  I gave it a try and have loved it ever since!  If you’ve never had it like this (and I’m assuming not many people have) try it one day.  You’ll thank me.

Around 3:30 I was hungry again so I had another honeycrisp apple.  I still can’t believe how unbelievably good they are!

After work I rushed to my acupuncture appointment.  I was so nervous, but it turns out I was nervous for no reason.  I just did a consulation with the doctor today and have to go back next Monday to actually get it done.  So now I have another whole week to be nervous!  On my way home from that I was thinking about what I wanted for dinner.  Something fast and easy.  So with all the leftovers in the fridge I made “Leftover Stir-fry.”

It had:

  • broccoli (from last night)
  • ww pasta (from last night
  • roast beef from New Years day
  • a green pepper I had lying around
  • garlic
  • extra virgin olive oil.

This was exactly what I needed, quick easy, and delicious.  This might become a weekly thing.  Well not this exact mix but a leftover stirfry is something I could definitely get used to.  And now I have leftovers of this for another night this week.

Well I’m off to clean up from dinner and then head over to the parents house.  Hope everyone’s Monday went well!  See you tomorrow food bloggers!
