I’m Back!

Thanks for all the comments about my mom.  She came home Sunday and is healing and recovering perfectly.  Her appendix hadn’t ruptured so the surgery was pretty simple and not really invasive, here’s a little blurb I found online about the type of surgery she got:

The laparoscopic (minimally invasive) surgical technique involves making several tiny cuts in the abdomen and inserting a miniature camera and surgical instruments. As many as three or four incisions are made. The surgeon then removes the appendix with the instruments, so there is usually no need to make a large incision in the abdomen. The camera projects a magnified image of the area onto a television monitor which helps guide the surgeons as they remove the appendix.

They actually sent her home with pictures of her appendix before they removed it.  It’s so weird.  She’s happy to be home and was touched by your comments, thoughts, and prayers.  

I really missed blogging but to be honest my meals were far from “blog worthy”, too much convenience food for sure.  I stepped on the scale positive I gained a pound but luckily I stayed the same.  Time to kick my butt into gear.  I feel like I’m stuck in a rut, and plan to correct that soon.  I am pulling out some cookbooks and looking for some fun new recipes to try out because I feel like every week I’m eating the same thing and I’m getting bored with it.  I really need to refocus on eating better and exercising more often, the weather has been nice in the mornings when I’m leaving for work and I think I need to get out of bed early and get a run or walk in bright and early so I don’t have any excuses, I just need to make myself a morning person.

For breakfast this morning I had the usual Chobani and a Heart Thrive Energy Bar

I picked that package up (the flavor was Raisin Spice) when I was at the hospital Sunday afternoon and absolutely loved it, unfortunately that’s the only place I’ve ever seen them so I might be sneaking into the hospital coffee shop to pick them up every so often.  The flavor was perfect and they are very dense.

The nutrition facts are pretty great!

Lunch today was pretty boring I had a sandwich Thin, this is a recycled picture, I forgot to take a picture of my lunch, I did not have an orange but a Mcintosh apple that a co-worker gave to me.  He brought a whole bag in and put it in our fridge and told us to help ourselves, so I of course did, I wound up cutting a few slices of apple and placing it one of the halves.  I wish I had some granola to sprinkle on, but I’m all out.

This did not stick with me long by 2 I was hungry luckily I started to put bars in my purse for those more snacky days.  Something I should have been doing all along but oh well.

Favorite bar ever!  I need to restock because I’m pretty sure that was my last one.

Dinner tonight was an easy one, I had plans to go on a walk with my friend Jessica, so I wanted something fast.  I used my last piece of ww naan and made a pineapple, meatless meatball pizza.  A flavor combo I’ll never get sick of.

In fun news I just bought a new phone Sunday night.  I’m officially addicted to my blackberry.

I couldn’t get a good picture of it, but this is the exact one I got.  Look familiar?  Rose just got the same one as well. I don’t know how I ever functioned without it.

Empty Fridge

I guess I thought I had more food in there then we did we currently have yogurt, eggs, blackberries, and some bread as well as some condiments.  I have no fresh produce and it’s making me nuts!  We leave Friday so I’m guessing we’re going to be digging in the freezers for meals for the next 2 nights.

For breakfast I planned on having cereal and yogurt, well I totally forgot the yogurt.  I also had no money to get milk from the vending machine.  So my breakfast was dry cereal.  As you can imagine this did not do a good job of filling me up.

Lunch was part of cleaning out the fridge,  my parents actually left for vacation a few days ago so I’m doing my part in cleaning their fridge out as well.  They had a stuffed bread last week for dinner, it was stuffed with sauce, cheese, and chicken breast.  It was delicious and I was totally satisfied from this meal.

For dinner I had an opened jar of sauce I had to use before we left, I also had some cleaning to do so I made a super quick dinner of whole wheat angel hair pasta, and meatless meatballs.

I’m pretty much all packed for vacation minus the things I use daily.  I’m shocked because typically I am such a last minute packer, it feels good knowing I have at least one thing out of the way. 

I haven’t mentioned my weight loss on the blog since the first week when I lost 4.5 lbs.  Well since then I have lost a total of 25lbs.  I still have some more weight to lose though so I hate buying clothes knowing I hope to get smaller, unfortunately I only have one bathing suit from a couple years ago that fits so I will have to go shopping for a few more tomorrow.  Yuck I hate bathing suit shopping!

I got a couple comments yesterday about my lack of snacking.  I have never been a snacker.  I will occasionally snack and I do post those snacks or at least write here that I did.  I do sometimes take bites of Andrew’s food and don’t take a picture of it or write about it on here but we’re talking about bites.  Before I started the blog my eating was all over the place, some days I would only eat dinner so I think my body is still getting used to the idea of eating 3 normal meals a day.  I think I’m getting enough calories without snacking during the day but I’m going to start doing some calorie counts and make sure I’m where I should be without them.

 

I hope you all have a great night but Andrew just got home and Monday and Tuesdays we don’t get to spend much time together so I’m going to go talk to him until bed time!  Have a fabulous night!

Here Come the Sun

The sun has returned!  After over a week of rainy weather we have a beautiful cloudless sunny day!  It’s supposed to rain later on but I’m so happy to have at least a few hours of sun.  Unfortunately I have some things I need to do around the house and a few errands to run, and you all know I love using Fridays to get everything out of the way before the weekend! 

I didn’t post last night because we didn’t get home until late.   My friend, Michelle, finished her last class of college on Wednesday and will be graduating in a couple weeks so we went out to celebrate.  We had a really good night and once again I stuck to drinking water all night,  I was planning on have some drinks tonight so I didn’t want to over do it this weekend.   But let’s rewind to yesterday morning.

I didn’t know what I wanted for breakfast yesterday we don’t have any milk and I just didn’t want any yogurt for some reason.  So I decided to keep it simple and have a clif bar.  Are these meal replacement bars?  The calories are pretty high but I know most people eat them as a snack.  I’m not sure I should be eating so little in the morning but it does hold me over.

For lunch I had some left over’s from Wednesday night.  Unfortunately I didn’t have any of that delicious rice left so I just had green beans and chicken.

And on the side I had some Food Should Taste Good tortilla chips I picked up on sale at Whole Foods last week.

This lunch was so delicious, the lean protien, whole grains, and fiber from the green beans did a great job of satisfying me.

I don’t think I give green beans enough credit, just look at the nutritionals.

Once I got home I was in pizza mode.  I think because Thursdays are my Fridays I crave pizza on that day.  Growing up we had pizza on Fridays all the time so I guess it has stuck with me.  I didn’t have any pizza crust so I used a piece of whole wheat Naan,  With a little bit of sauce, 2.5 meatless meatballs crumbled, lots of pineapple chunks, and some 2% mozzarella cheese.

I love pizza on Naan bread!  It’s so delicious!  And pineapple chunks and meatless meatballs is probably my favorite flavor combination right now. 

Well I’m off to get ready for my Friday errands today’s include getting my oil changed, and getting Cocoa (my car) washed.   She definitely needs one!  Plus the usual cleaning up around the apartment and doing some gardening.  Hope you are all having a great Friday so far!
