By The Sea

This feels so comfortable, sitting at my desk, blogging about my day’s food.  I didn’t realize how much I missed this! 

I have to say today was an excellent day, work just flew right by with no stress or anything.  After I got out Andrew and I went out to dinner, and then we spent some time with his family.  Can’t get a much better Thursday then that!

Since I wasn’t able to blog last week, I didn’t get to tell you I’m back to working Fridays now.  Last week was my first full week back since March! The weeks definitely feel a whole lot longer, but I’m happy my paychecks are back to normal. 

Breakfast today was a blueberry Chobani.  I meant to bring some things to mix-in but forgot.  I decided to check out the vending machines for some options.  I found a granola bar I used to eat when I was younger and decided to crush that up and mix it in.

Lunch was simple.  I was going to have a pb & j sandwich but decided to just have pb open faced on a sandwich thin.

Surprisingly I didn’t even have to dip into any snacks later on.  I had a nice normal appetite today, not a bottomless pit, or a lack of appetite.  Just Right.

For dinner Andrew and I had plans to cook but we had some errands to run, and want to spend some time with his family before they leave for vacation this weekend so we decided to just hit up the small restaurant on the bay by our apartment.  The weather was absolutely perfect for eating out on the patio.  It’s been so humid here, but the rain this morning balanced everything out.

Now I’m off to play some Wii Sports Resort with Andrew,  has anyone else played this new game yet?  It’s so much fun!

Oh before I go, did anyone else see Nigella Lawson’s new fridge?  I usually don’t swoon after an appliance but it’s actually really beautiful.  I found this on This Kitchn.

Stress Non-Eater

<rant>I know there are people out there who eat when they are stressed.  I am the exact opposite.  When something is really bothering me I let it manifest itself in ways that prevent me from wanting to eat.  It’s probably just as unhealthy as someone who binges on a stressful occasion.  I will admit that sometimes when I’m just a little bit stressed and eat I make poor choices, I don’t overeat though.  I might just say screw it I’m eating that cookie(s).  But when I let myself get so worked up eating is the last thing I want to do.  Today was one of those days.  For the past year Andrew’s twin brother’s girlfriend and I haven’t gotten along.  Today I finally let everything build up and when I got angry with something she did today,  I let it eat me from the inside out.  We sent some not-so-nice emails back and forth, and finally spoke on the phone a little while ago.  I’m a people pleaser, I get upset when people don’t like me, it bothers me so much, that this really stung.  I should have just went about my day but unfortunately I wound up leaving work early, and stewing in my anger.  Nothing has been completely resolved she apologized for somethings and I accepted her apology and for Andrew and his brother’s sake we have decided to start over.  Is it the best option?  Probably not.  Will it make Andrew happy?  Absolutely.  Besides that his brother is now going to be my brother-in-law in a couple years, and who knows one day she might be my sister-in-law so I have to bite the bullet and work on this relationship no matter how badly I just want to hide my head in the sand.  I’m more of an “ignore it and it will go away” type of person, not a strong characteristic.  Maybe it’s time I grew up and just worked on things. </rant>

Wow okay sorry for all that, it feels good to vent though.  And I’m sure at least one of you will have a similar story, or be able to share advice.

Enough about that, this is a food blog after all.  For breakfast I once again had a sandwich thin with pb.  I actually have pictures though!  And Homegirl, the key to the perfect pb spreading is to spread it on thick in the middle and then work it towards the outside.  No I’m kidding, there is no secret,.  I do admit I have a little more then a serving perhaps 2.5-3 tablespoons I’m willing to get the extra calories though.  I’m still losing weight so perhaps I’m doing something right.

Then the trouble began.  Andrew came to take me out to lunch since I was so upset.  We wound up going to my favorite salad bar.

I ate some but not all of this salad.  If i had to guess I would say between 1/3 and a 1/2. It was:

  • mixed greens
  • carrots
  • onions
  • chicken
  • cucumbers
  • and light balsamic vinaigrette.

And this is where my pictures from the day end.  I came home early and began screaming about the whole thing to poor Andrew.  I was so worked up!  I give myself this nauseous feeling when I get upset, and eating seems impossible.  I feel better now but not well enough to eat something, I did stop by my mom’s house though and picked up her left over chicken parm, so get ready to see it for lunch tomorrow!

I’m off to watch the New Jersey Housewives reunion, and then get some much needed rest.

Beach or Bust!

I couldn’t be any happier right now, I’m almost all packed and ready to go! I have 4 hours until we’re on the road and on our way to the beach.  I’m sorry I haven’t been blogging much this week, we’ve had to do a lot of things to prepare, Wednesday we had to go bathing suit shopping (I got 2 new bathing suits that will hopefully fit me throughout the summer because damn they were expensive), then we went to Panera for dinner (I forgot my camera but I do have pictures of the leftovers I had for lunch yesterday) and then my friend Laura came over so I could see her before we left and so she could show me some samples of invitations she got for her wedding next year.  After she left I cleaned the apartment a little and then went right to sleep.

I do have my eats from yesterday to share, unfortunately they are pretty boring because we seriously have NOTHING left in the fridge to eat.

For breakfast I grabbed a Luna bar.

Perfect as always.

Work was a little hectic yesterday because I had a lot of things to finish before my vacation started.  When lunch time rolled around I realized how hungry I was and was more then happy to eat my left overs from Panera.  I had decided to skip the “you pick two” and get a whole sandwich.  I got the Chipotle Chicken sandwich which I customized without the tomatoes (I hate tomatoes) I got it on regular french bread, and I didn’t get the chipotle mayo spread.  So even though it says it should be about 900 calories I’m guessing with it was less and I did spread it out over 2 meals so I don’t feel like it was that bad.  It was definitely delicious if nothing else.

Once I got out of work I had a quick errand to run, then met Andrew at my mom’s house so he could leave his car in their driveway instead of on the street by our apartment.  Then we ran to whole foods to stock up on some bars for the trip. On our way home from running errands I realized how hungry I was, I was craving pizza so I I had 2 pieces at our local pizzeria.  I got sausage, peppers, and onions.

After dinner I went to my friend Jessica’s to drop off a check I owed her and to see her before we left, we only stayed for about 1/2 an hour but by the time we got home it was after 8!  Andrew still had to pack and I wanted to load up the car before bed.    Andrew couldn’t get off work today so I drove him into work this morning and will be picking him up and leaving right from their for the long road trip.  After I got home from dropping him off I called my mom to talk to her, I’m so excited to be with my family again tonight, while on the phone I saw a gigantic hornet/bee/wasp (whatever) on the window in the kitchen.

It’s hard to get an idea of how big this thing really is but it’s about the size (both width and length of my thumb).  I am convinced it is a killer bee of some kind (are those even still around?)  I grabbed a can of hornet spray from under the sink but there was barely anything left in it since I have to spray every bug I see with it, I called everyone of my friend’s to see if their boyfriends were around, I even contemplated calling the landlord to come up and take care of the situation.  I was afraid I would hit the bee not kill it and then it would come after me.  Then I came up with a brilliant plan to kill the bee!

I got a glue trap that we had, sprayed a fake flower with some perfume and placed it on the glue trap hoping to entice the bee to step on it.  I do not know if this worked because I’ve been hiding out ever since if it doesn’t work soon I will be picking a real flower and placing it on the trap, if that doesn’t work I’m going to just leave for the week and hope it dies on it’s own. 

Well I’m off to run the last of the errands, we will be on the road at 3 and won’t be arriving until very late since we have at least an 8 hour drive.  I will be blogging throughout the week (hopefully poolside) and keep your eyes open for a very exciting give-away sometime early in the week!

70 Degrees and Loving It!

I am 10,000X happier then I’ve been in so long!  I can’t tell you just how much I love the warm weather better!

I’m excited to get back out there and enjoy the day so quick 2 day recap!

Yesterday for breakfast I made the most beautiful smoothie, it was so purple!

This smoothie contained:

  • 1 scoop protein powder
  • blueberries
  • peaches
  • a banana
  • skim milk

I took 2 or 3 sips then put it in a to-go cup for work.  I got ready for work and left.  And forgot the damn smoothie!  So remember what this smoothie looks like.

So when I got to work I snacked on 3 prunes, while pouting about my forgotten smoothie.

Lunch time couldn’t come fast enough, I was holding off until a reasonable hour for lunch and when I decided to dig in, it was gone in 2 minutes flat.

Around 3 my stomach started growling so I had 4 sweet peppers:

Andrew had the week off for spring break from school and he made me the best dinner again!  What a sweet guy.  Crockpot Chicken Parm!  So excited to eat that again!  But first I forced us to go for a walk along the trail, I burned about 250 calories because I was in a hurry to get back and eat some chicken parm.

He used chicken tenders so I had 3 and a serving of ww penne.

After dinner we went to pick up my little sister for our sleep over.  She came over and we passed out around midnight.

I woke up at 6 this morning and went for a little walk/jog around the neighborhood by myself.  I burned 217 calories.

Then came home and drank my smoothie (that Andrew so kindly put in the fridge for me yesterday after I forgot it.)  It wasn’t nearly as pretty today but still tasted awesome.

After the 2 lazy bones in the house woke up we hung around the house and watched tv.  My mom called and asked us if we’d like to go out to breakfast, I actually was hungry again so we went to our favorite breakfast plate in the junction.  I’m predictable and had a scramble with potato, pepper, onion and egg, with dry ww toast on the side.

I also stole some of my sister’s home fries because she doesn’t like them.  If it looks like a huge portion it is definitely decent but I love that they use smaller plates there then a standard restaurant, I hate when they have those huuuuge plates and fill them up with food.  These are just the right size.

After breakfast Andrew and I went for a walk on the trail together.  We walked for over an hour and I burned 466 calories.  Which puts me at 683 for the day, not bad for just walking and jogging.

When we got to almost the end of the trail I saw a bunch of people up ahead with orange jumpsuits on.  CHAIN GANG!  The back of their jumpsuits said NJDOC (NJ department of corrections)  there was a cop with them but there were at least 20 of them.  Nothing too weird right?  There was a cop so we should have felt safe.  But about 1/2 of the prisoners had freaking CHAINSAWS!  For real?  One Cop with a gun and 10 prisoners waving Chain Saws around?  I whispered to Andrew “turn around real slowly, and let’s get the hell out of here”.  Only a little while later when we passed 2 more cops walking along the front of the trail,  did we realize Andrew had an orange sweat shirt on I was convinced Andrew was going to get shot at because the cops would think he was a member of the Chain Gang.  I walked a good 10 paces behind him just in case.  I also thought the cops at the front of the trail were there because a prisoner had escaped and we were going to be part of a hostage situation.  I have a very active imagination obviously.  I also told Andrew that it was the “closest I’ve ever been to being murdered.” He told me that I was no where near being murdered but prisoners with Chain Saws is never a good combination.

Weekend Wrap Up

What a fun weekend I had!  If every weekend had weather this nice, and as many good times I would be a very happy and lucky lady.  I got to spend a lot of time with my grandparents which is why I didn’t blog yesterday also got to spend a few more hours with them this morning before they left to go back to the Poconos.  I hope you all had a fabulous weekend as well!

After such a fun weekend I’m exhausted so I’m going to try to make this a quick post.

Yesterday I was running late because we had a small problem with the faucet in the bathroom not turning off that I was trying to take care of.  I grabbed a clif bar as I was running out of the house for my Doctors appointment.

After the doctor’s and visiting the assisted living with my grandparents I got a smoothie.

I got one with Mango, pineapple, non-fat yogurt, and protein powder.  Luckily there was no allergic reaction to it yesterday and it was delicious.

For dinner we ate at my parents we ordered chinese food and I decided to get vegeterian chow mein.  It was disgusting.

I wound up eating some broccoli with garlic sauce mostly, but didn’t eat much of that either.  Disappointing.

Later after leaving my parents house we came home to the apartment and met our friend Mike here to hang out.  We spent the night looking up houses in Florida, watching YouTube videos, and talking.  Have I mentioned I want to move somewhere warmer?  I know the weather is getting nice but I just realize how much the winters affect my mood and I need to get to somewhere warm.

My wine was in a very special Secret Service glass from my Aunt Suzy for Christmas last year.  It was a raspberry wine and it was so good.  I definitely drank more then this amount, a lot more.  After the week I had, I decided to relax a little and enjoy the wine though. 

Mike was hungry so I offered some Popchips to him as long as he would allow me to put his pictures trying them on the blog.

Thumbs up!  He tried the orginal and I had a few as well, we wound up dipping them in salsa which was really good.

See Andrew in the background carrying a bowl?  He so lovingly shared his leftovers from Friday night’s dinner with me.  I gladly ate up some of his Rigatoni Pomadora, I was starving since dinner was a such a mess earlier on.  I didn’t take a picture of the rigatoni I completely forgot (too much wine).  I really didn’t have that much, but for the 13 dollar dinner to get 3 meals out of it was really good.

This morning I got up and got dressed to make it back to my parents to say goodbye to my grandparents they wound up sticking around for a few hours so I actually got to spend a good amount of time with them.  I had a cinnamon raisin bagel toasted with a little butter.

After my grandparents left Andrew and I went to the gym, it was such a nice day we decided to just do some weights there and take advantage of the nice weather and do our cardio outside.  While doing the weights I burned 225 calories in the half hour we were there.  Then we headed back towards the apartment, my dad had told us they built a new trail in our town that went right along the water.  We decided to give that a try.  I wish I had my camera with me because it was a beautiful walk.  We walked and jogged for an hour, and wound up burning 434 calories, so 659 total with our 2 workouts.

After our walk we  hung out in the marina and walked around a little more then decided to go out for lunch at a little restaurant in the marina.  I got a potato pepper onion and egg sandwich on whole wheat toast.  I wound up deconstructing the sandwich and eating it just like normal scrambled eggs and eating the toast on the side.

On the side you can also see the pickle Andrew so kindly gave to me from his burger.  1 more week until I can eat meat again and until today I haven’t really craved much red meat, chicken yes, red meat not usually.  His burger just looked so damn good I wanted it so badly!  I’ll definitely be having a burger sometime soon after next Sunday when Lent is over!

For dinner we decided to try spaghetti squash for the first time, with meatless meatballs on the side.  I’m so glad we tried the spaghetti squash it was delicious and we have so much left over.

Well before I head off to dreamland don’t forget tomorrow Meghann is having her 2nd Blogger bake sale!  I’ll be donating a loaf of this PB Banana bread with chocolate chips, I have modified the original recipe a little and am so excited to be able to donate this for her bake sale!  If you don’t know, Meghann is training to run the Rock n Roll San Diego Marathon in an effort to raise $3900 for The Leukemia & Lymphoma Society. My First Time…

Get your mind out of the gutter!  Today I did something I’ve never done before,  I baked!  Sure I’ve made some slice and bake cookies, but I really have never baked anything.  I don’t like cake, I don’t like sweets in general, really no reason for me to bake.  But I found a recipe I really wanted to try and had some ingredients I needed to use up so I found a recipe and gave it a try.  Success!  But more on that in a second, let’s get to my other eats for the day.

For breakfast this morning I decided to try a Cherry Fage 2% sample I recieved.  Holy crap you guys, this was great, reminded me of a cheesecake.  So yummy!

I can’t wait to look for these in the store because it was seriously yummy, although I typically prefer 0% yogurt, this is something I would love to indulge in.  After I snapped this shot I mixed in some granola, took it to a whole other level.

For lunch I had a big romaine salad.

This lunch was super filling and oh so good.

After work I had to go the chiropractor and then on my way home I snacked on some grapes.  Andrew took the pictures of the grapes for me since I was driving, can you tell I couldn’t wait for him to take the pictures before I had to start stuffing my face with them.

When I came home I decided to make an omelet.  I used 2 eggs, less then an ounce of mozz cheese, 2 peppers, and some onion.

Andrew decided to make potato pancakes to go with his dinner and made me a little guy.

I also had another one of those ww onion rolls I picked up at Whole Foods last week.

So now onto my first baking project.  I used a recipe from the site Vegetarian Times, I made their Peanut Butter Banana Bread With Chocolate Chips.  The thing I changed from their recipe was I used smooth pb as that’s all I had instead of the crunchy the suggest.  It was a super easy recipe, and it came out perfectly.  I had no idea what I was doing and was pleasantly surprised with the outcome.

I cut a small slice and split it with Andrew.  Wow, wow, wow, this was amazing.  Andrew said after eating his half.  “This is delicious, we have to make more, and you have to look up more recipes on that site because this is f***ing amazing.”  Nice mouth huh?  I kid, I’m much worse then him, but I censor myself as to not offend all you lovely ladies.

Anyway the recipe is a hit and I’ll be making more bread over the weekend.  You all are a bad influence, I caught the baking buck from you!  Well I’m off to read and then go to sleep, g’nite bloggies!

Friday Night Out

I am so happy the weekend is here!  Today went by faster then I imagined it would.  I had training today for 8 hours for our new design/drafting software.  It was really interesting, and the instructor was great so the day was over in the blink of an eye.  Now I’m just doing a quick post before we leave to go to a bar to meet a couple of friends.  I’m not going to drink when I go out tonight but I am enjoying a little cocktail right now.

Yesterday I recieved a package of POM Wonderful Pomegranate  juice, like I’ve seen so many other people talk about on their blogs.  I was so excited when I came home to a box on the steps.  I’ve been dying to try this juice.

Thanks Diana for giving me the opportunity to give these a try. 

I am currently drinking some of the juice with a small amount of vodka. It is so delicous!  Great cocktail.  After I made my cocktail I took a sip of the juice straight and although many bloggers said it was to tart for them to drink alone I thought it was really good, and can’t wait to drink some more plain.

But obviously I am getting ahead of myself so let’s rewind back to this morning.  I knew I was going to be starting the training almost the second I got into work so since Andrew and I were able to commute today I took the car ride as a chance to eat my breakfast.

My granola was at work so I just ate this plain.  I loved it, but it was more of a snack then a meal, and I was pretty hungry mid morning.

We had lunch provided for us today and I took advantage of the pizza.  Pizza 2 times in 2 weeks?  Who am I to say no?  So I took a slice of plain.

Dinner tonight I made a veggie quesadilla.  Andrew wanted me to roast some potatoes like I did the other night so he could have them with eggs, I took some of the roasted potatoes, and I also roasted 2 peppers, and some onion, and put them all on a tortilla wrap with some cheese.  This is before I put the other tortilla on top.

I popped this in the oven for about 10 minutes at 400* and enjoyed a yummy quesadilla with some salsa.

Come on Spring!

I am so sick of winter!  When I was leaving for work this morning at 7:30 it was already snowing.  It’s still knowing now, almost 13 hours later, and we have about 6 inches.  That’s more then we’ve had in the past few years.  I’m a big baby when it comes to driving in the snow, so needless to say my commute home was awful.

Atleast my food today was all delicious.

For breakfast I had “overnight oats”  I used 1/2 a cup of oats, 1/2 a cup of milk, 1 tbsp of water.  I mixed it all together with cinnamon, and vanilla extract and then popped it in the fridge until I left this morning.  Once I got to work I mixed in 1/2 mushed up banana and mixed that in the oats.  I threw it in the microwave for 1 minute 30 seconds.  It was perfect and dare I say even better then my oats Sunday morning?  No wonder you all love this so much.

Right before I ate it I mixed in 1 tbsp on pb and the last of my blueberries.

Spoiler alert: I already threw some overnight oats in the fridge and will have something super similar tomorrow.

This stuck with me all the way through to lunch.  For lunch I had a string cheese, spinach salad, and 2 clementines.

I had every intention of going to the gym but I was braving the roads again.  I decided to make ahead as much as I could for the rest of the week considering I was stuck at home.

For tonight’s dinner I made Lasagna roll-ups.  I originally got the idea from The Cooking Light Cookbook.  In my roll-ups I mixed cooked green bell peppers, onions, and garlic with 1/2 a cup of ricotta.  Then put about a tablespoon of filling on the end of a lasagna noodle rolled it up and covered it with sauce, put it in the oven for 10 minutes and then sprinkled mozzarella cheese on them.

I made 8 in total but here are my 2 from dinner

Yummy dinner and I have leftovers.  I also have all my food for tomorrow packed so now it’s time for me to wait for Andrew to get home from work and then go to bed.  What a long snowy day.

Hump Day in the Hospital

Happy Wednesday, the weeks more then 1/2 over.  Thank God it’s been one thing after another all week and I’ll be happy when it’s over.   I want to thank everyone who commented yesterday with ideas on how to combat those days where you are just feel hungry alllllll day.  Thanks for the tips!

I woke up this morning to a blanket of snow, Andrew had a snow day from school, I was so jealous, but they didn’t wind up plowing our road until almost 9.  I asked Andrew to drive me in because I’m a complete baby when it comes to driving in the snow.   So I got to work after 10.

Before I left I had a great breakfast of Fage 0% and blueberries.

I ate about 1/2 of this when I got a text from my mom that said Andrew was coming to pick up her and my sister up to take my sister, Kristin, to the ER.  I couldn’t eat anymore I was so worried.  Kristin had been complaining she didn’t feel good last night and then this morning she fainted.  My mom was really concerned because my sister has only fainted one other time, she hadn’t been hungry, she had a terrible cough, and she didn’t seem right once she came to after passing out.  I felt so bad knowing my little sister was at the hospital and since Andrew was taking her I had no way to get there.  I felt helpless.  Luckily once my boss came back from lunch I explained to her that I was going to be leaving as soon as Andrew could come to get me.  She offered to drive me to the hospital so I wouldn’t chew all my nails off waiting to find out what was going on.

I know Kristin  hates hospitals, and I was worried it was pneumonia or something worse and she’d have to stay awhile.  But luckily once my boss dropped me off they were already running tests on her and it turned out she just had the flu.  I was so thankful, that it wasn’t anything too serious.  I was happy I had gotten there in time for her to get her blood work so I was able to be there to hold her hand.  She’s home now after the felt she was hydrated enough from the IV.  

Once we were able to leave we went back to my parents house to change into our gym clothes.  While I was there I ate the gala apple you see in the background from my lunch.

The gym was pretty much just okay today.  Not my best day but not my worst.  I was so hungry at this point I think my body needed some serious fuel and that apple just wasn’t enough.

Once we got back to the apartment we made something fast and easy.  Chicken Quesadillas.  (Pronounced like the grandma from Napoleon Dynamite does “Make yourself a dang ques-a-dilla!”)

Mine included mexican blend cheese, 4 ounces of chicken, peppers and onions.  With some salsa for dipping.

It definitely hit the spot after such a long day. I’m so ready for bed, sorry I didn’t get to comment any of your lovely blogs today, I’ll try to do some catching up now but then it’s bed time for serious.

Bottomless Pit

My goodness I have been so hungry all day!  I know days like this will happen from time to time, and I hope I get better dealing with those days where all I want to do is eat and eat and eat!

Breakfast this morning was Fage 0% yogurt with granola and cranberries.

So good, although Chobani is definitely my favorite this is not far behind.   I love the tart cranberries mixed into the yogurt.  One of my favorite combinations.

My hunger attacks didn’t start until later in the day so this held me over until lunch.

Lunch was a pb and banana sandwich on an Arnold Sandwich Thin.

That’s what my stomach became a bottomless pit.

At 3 I ate peanuts.

I made it home for dinner without gnawing off my arm somehow.

For dinner I made a stir fry.

It contained

  • a green pepper
  • some onion
  • broccoli stalks
  • carrots
  • chicken
  • & brown rice

This held me over for about 10 minutes.

Then I ate about 8 Quaker Oatmeal mini rice cakes.  Then I drank some water.  Then while I was on the phone with my friend Michelle, I mindlessly grabbed a spoon and my jar of peanut butter and took a big spoonful and ate it right out of the jar.  It was heavenly, but so not needed.    I feel satisfied finally!  But seriously that was a lot of eats in just a couple hours.  Sorry there are no pictures of my snacks they were in my mouth faster then any camera could have snapped a pic of them.

So on days like this where I just can’t get enough food, what’s something I can do?  Does anyone have any tips on squishing that feeling, or a snack that almost always knocks out the hunger?
