Smirnoff Summer Entertaining Extravaganza: Campfire Cookout
Thanks to Smirnoff and Foodbuzz my friends and I had a great weekend camping! The weather did not hold out for us, unfortunately it rained both Friday night and Saturday night but we definitely made the best of it.
We planned on having a Campfire Cookout party Saturday night and decided to do something really different then the usual burger and hot dogs. We decided what could be more fun than doing a grilled personal pizza party, over a campfire?
To drink while preparing the pizzas we drank some Smirnoff drinks I brought to keep us cool. During the day it got super humid and these were definitely good drinks to cool us down. I bought The Smirnoff Tuscan Lemonade, Smirnoff Vodka Mojito, and Smirnoff Pomegranate Martini, and Smirnoff Ice Triple Black.
These drinks were really good but definitely strong, my favorite was the Mojito, and it seemed all the girls really enjoyed the Pomegranate as well. Michelle had brought fresh Lime Mint from her garden at home and crushing up some of those leaves and putting them in the Mojito really made them taste fantastic.
The one thing I recommend is definitely cutting it with something, the bottles suggested Soda Water but we didn’t have any. We did use just regular bottled water (about a ¼ cups worth) and that really made them better. I’m sure it would have been even better with the soda water though.
I made the dough Thursday night and brought it with us, I made enough dough for everyone to have their own personal pizza. I used Michelle’s mom’s recipe and it worked out perfectly.
- 1 package yeast,
- 1 cup warm water,
- 1 teaspon sugar,
- 1 teaspoon salt,
- 2 tablespoons oil,
- 2 1/2 cups flour.
Dissolve yeast with water stir in remaining ingredients. beat vigorously. allow dough to rest. spread dough on pan. make your pizza!
We decided to make one pizza for all of us to share and to test it out
For the test pizza we made it with just cheese and sauce.
And onto the fire it went.
It cooked for about 25-30 minutes.

The smoke was getting our eyes which is why Jess and I have them closed.
Unfortunately we forgot to grease the pan in any way and we kind of created a big mess. The pizza was delicious but it was a pain to get it off the pan.

Michelle had brought Pam but the container was empty so we used a small amount of butter on the foil each time just to keep it from sticking. We brought a variety of toppings so everyone got to have exactly what they wanted.
Andrew’s pizza was up first and he chose to use BBQ sauce, mozzarella cheese, grilled chicken, and bacon bits on his pizza.
We didn’t have the timing down quite yet, so his was a little doughy, it’s hard to regulate the temperature and cook it thoroughly. The real trick is to just be patient. The bottom is going to be super crispy but honestly it tasted delicious even if it was black in some spots.
Next up was Scout and Rob, we decided to hurry the process along by putting 2 at a time on.
Scout decided to make a hamburger pizza. He cooked up the hamburger meat in some bbq sauce and then used tomato sauce as a base on the dough. He then layered meat, and American cheese on top. His looked really great! Definitely creative!
Rob went with a classic. He used the tomato sauce, with mozzarella cheese, pepperoni, and bacon bits. The smell of his cooking was really fantastic. I think we made some of our camping neighbors pretty jealous.
Just as us girls were about to begin making our pizzas, dark clouds started rolling in. A severe thunderstorm warning came on the radio and the sky just opened up.
It poured for a few hours, and our chance at pizza over the campfire was quickly squashed. We improvised with frying pans on the camping stove, which was sheltered by one of our canopies. It was even harder to regulate the cooking on the stove top.
While Rob and Scout had been cooking their pizzas, the girls threw some fruit and veggies into tinfoil and threw it right in the fire. So we had those to use on our pizzas.
Michelle’s pizzas was fresh mozzarella cheese, sauce, peppers, and eggplants. I have to say I was pretty jealous of her pizza, it looked fantastic. Jessica used the fresh mozzarella, sauce, and peppers.

And I used the fresh mozzarella, and pineapples on mine. But apparently I was too busy taking pictures of everyone else’s pizza because this is the only shot of it cooking I got.
Unfortunately the bottom of the pizzas started to almost burn but the top was completely doughy, we made do by scraping most of the dough off and just eating the crusty parts with the toppings, I have to say with all the trouble, and mishaps, the pizzas were really fun to make and to eat, and we all really enjoyed it.

But we made the best of our time on the campground, and we definitely have some great memories. The rain died down later that night and we were able to enjoy some time by the fire.
And we of course had dessert planned.

Rainy Monday
I’m so glad the rain held off until today as it was supposed to rain on and off yesterday. I don’t care what the weather is like Monday through Thursday but if I have the next 24 Friday’s off I want them to all be nice! According to the weather this Friday and Saturday are supposed to be in the upper 70’s and sunny again, it’s still early in the week so clearly that can change but I’m keeping my fingers crossed that it is true.
Yesterday after I blogged I went to my parents house, we sat out on their patio and snacked on some peanuts (unpictured) and enjoyed the time in the sun. It wasn’t 80 like it had been on Saturday but I sat in the sun and enjoyed the warmth. My mom invited us to stay for dinner and she was making my favorite roast beef so we stayed. It looks very similar to last weeks Easter dinner because we had the same sides but instead of prime rib I enjoyed 2 pieces of roast beef.

And a ton of asparagus.
All together:
Fantastic dinner. To finish out our almost Easter repeat I also had a piece of cheese cake left over from last week.
So good, thank God this is in their fridge and not mine or this cake would have been eaten in a couple days.
After dinner we came home where I organized my things for the week and promptly fell asleep. This 8 hours of sleep is wonderful!
Today was a day of mostly leftovers, sorry if they are boring.
I made a full batch of pancakes yesterday so I brought in the 3 leftovers. I was asked by Erin if I have a recipe for these pancakes. I didn’t make these from scratch but used the Whole Foods 265 brand of Whole Wheat buttermilk pancakes, they are really delicious but definitely not quite as fluffy as regular pancakes, but I really enjoy them.
I smeared a litlte pb on each of my leftover pancakes, these were amazing.
For lunch today I continued with the leftover trend and had the last of my turkey burgers from Friday. I had it on an Arnold Sandwich thin. We’ve always had ketchup packets at work but apparently they were all out but I actually enjoyed this a lot plain.
After work I had an errand to run and then went straight to the gym. I was so hungry (I should have had something to eat at work but I didn’t get hungry until I was in the middle of working out. I burned about 307 calories but then called it quits, it was embarrassing how loudly my stomach was growling. I came home and threw together a spinach pizza.
For the whole pizza I used about 1 cup of spinach, and 2 ounces of cheese. I didn’t think I’d eat the whole thing but I totally did.
Before I go jump in the shower and get ready for bed I was tagged by Brandi to fill out the Survey of 8’s. I love filling these things out so I of course was happy to do it.

Brinner Makes It Better
Well I successfully got 8 hours of sleep last night but as you can see it’s already after 10, I don’t actually have to be asleep until 10:45 for it to be a full 8 hours but I know how long it takes me to wind down and get to sleep. I’m hoping I can rush it along and still get my 8 hours!
This morning I woke up refreshed and ready for the day I decided to make a smoothie for breakfast. It was delicious. I ran out of POM juice and I really think that’s what was giving my smoothies the bright colors and really enhanced the taste. I will certainly be picking up more of it soon if only for my smoothies!
Looks like cement doesn’t it? This smoothie contained:
- a couple cups of spinach
- skim milk
- 1 scoop soy protein powder
- blueberries
- peaches
- 1 banana
Really delicious but definitely missed the POM and the color was a little unappetizing.
For lunch today I had the slice of free white pizza from last night.
Is it possible this tasted better because it was free? I ate all of it except the crust.
For a snack later on I ate the other 1/2 of the peanuts from yesterday but totally forgot to take a picture.
I had some errands to run today after work so I decided to have a quick and easy brinner.
3 pieces of turkey sausage, a bagel (the bagels I have been eating are from Costco, 2 sleeves of 6 for 5 bucks!) and 1 egg scrambled.
Yummy, a few times during Lent Andrew had turkey sausage and I was craving it badly today once again I gave in to the cravings for meat. There’s one more thing on my list of things I want to eat now that Lent is over, turkey burgers! I plan on having one on Friday when the temperature is going to be 70! Perfect night for a bbq! Also that night we’re having our friends over for our first night out on our deck this season! So exciting!
Tomorrow is my new Friday so my sister is coming to sleep over since she’s on spring break. Then Friday I plan on spending as much time outside as I can. What are your plans for this weekend?

Free Pizza and Extra Zzz’s
What a crummy day. It’s been raining since I woke up this morning, and it’s been cold and windy, definitely the kind of day you just want to stay in bed and read or watch some trashy tv. But I hear it’s going to be a gorgeous weekend here (in the 70s!) so let’s get this rain out of the way before the weekend!
For breakfast this morning I continued with the bagel/pb combo, today though I had a cinnamon raisin bagel.
Delicious it reminded me that I have a jar of PB&Co cinnamon raisin in my cabinet, so I’ll definitely be breaking that out again soon!
For lunch today I had the other 1/2 of my Chicken Fajita wrap.
As I took my first bite I realized this side had a ton of cheese and whatever it was I wasn’t a fan so I deconstructed this into a bowl and left the cheese to the side. It was still a great lunch but next time I ordered it (which I totally will) I would get it without the cheese. They already had to make it special for me because it had a sour cream (yuck) based dressing so removing one more item shouldn’t be too much to ask.
Around 3 I started to get super hungry. I don’t know why I don’t bring snacks for the days I need them but for real I knew I wasn’t going to make it until I got home so I ran to the vending machine and got some peanuts. The only decent choice from the vending machine in my office.
Yum and I still have 1/2 the bag left for the next time my hunger strikes.
Do any of you keep any snacks at your desk at work? What do you keep in your snack stash, I need some ideas!
As I’ve mentioned Andrew had given up pizza for lent and I knew he had been craving it for a while now, so we decided to meet at a local pizzeria when I got out of work. I got 2 slices, 1 white, and 1 sausage and pepper.
Right after I took a few bites the guy who worked behind the counter brought me another slice because he felt bad that there were some burnt spots (I actually enjoyed the crispy parts) and he insisted on giving me another slice to take home. Who is going to turn down a free slice of pizza? Not this girl! You’ll see it for my lunch tomorrow.
Clearly I started eating this slice before I realized I forgot to take a picture, it was super thin sausage slices and there were only about 4 on the whole slice but it gave the slice such a great flavor. I think I’m getting a little burnt out on eating so much meat already though and I’m ready to relax and eat it more infrequently like I used to.
As soon as we got home I got into bed and watched some Real Housewives of NYC and tried to get warm. I am so ready to feel 70 degrees this weekend, it’s like I forget what it feels like to be warm.
Well I have some emails to respond to and I’m hoping to fall asleep by 10. Melissa at Run, Eat, Repeat is trying to get 8 hours of sleep every night for the next 30 nights. I know I could the extra Zzz’s so I’ll be following in her footsteps. Wish me luck!
Easter Eve
I loved Easter as a child, dying the Easter Eggs, watching The 10 Commandments, waking up to find the Easter eggs hidden around the house, and all the goodies in my Easter basket! I still love Easter and although I didn’t dye any Easter eggs tonight I am watching The Ten Commandments with Andrew. I want to get back to the movie so I’m going to get right to the eats.
After my post yesterday we accomplished almost everything on the list done. A few things got pushed aside to another day but we got so much accomplished I don’t mind one bit. For dinner I made pizza, with a boboli whole wheat crust. I used sauce, mozzarella cheese and spinach.
I put the spinach under the cheese and I think it tasted great, there was a ton though that you can’t really see. After dinner we showered and got ready to go out with some friends to a local Irish Bar. I stuck to water all night though.
It was pouring this morning and I wound up sleeping until 8:30, we got up and went to Costco with my dad to pick up a few things. On the way to my parents house I had a chocolate brownie zbar.
After Costco I had to go to the chiropractor. Once we returned to my parents house we hung out with my sister while my parents went shopping. I had a honey ww bagel with some pb.
My mom gave me the last of the baked ziti from the other night so after we came back to the apartment I had that for dinner.
My batteries were going dead so this picture came out blurry sorry.
While watching The Ten Commandents I decided to have dessert. I had vanilla fro yo with chocolate chips and pb! It was so yummy!
I melted 1 tbsp of pb in the microwave then poured in on top of the fro yo and then placed in back in the freezer to become like a shell on it. My friend and I used to do this in high school all the time, it’s a super yummy treat.
Well I’m going to get back to the movie! I’m very excited for tomorrow because not only is it Easter but I get to eat meat again. I’ll talk more about my experience of giving up meat for lent tomorrow, I am definitely glad I did it, but I’m excited to have some turkey bacon for breakfast tomorrow.

Sorry I didn’t post last night we didn’t get home until 11 and I was asleep within 5 minutes of getting home. We used to go out some nights at 11 o’clock, now I can’t stay up for anything! Oh well I guess that’s what happens as you get older.
Yesterday I switched it up a little and had a smoothie first thing in the morning for breakfast. I had the time before work so instead of bringing my usual yogurt I blended up some purpley goodness.
This smoothie contained:
- blueberries
- pineapples
- spinach
- 1 scoop protein powder
- skim milk
- POM juice
Delicious as always but I’m all out of bananas so I definitely missed that flavor!
Well you can’t expect me to stay away from Chobani for a whole day so that was my lunch!
I added granola and pb on top. What a difference the pb makes in the staying power of this yogurt. I had an apple on the side but didn’t wind up eating it until 3:30.

I began craving pizza around 4 so I was texting Andrew non-stop asking him if we could go out tonight to Harborside again. He of course said we could. On the ride home we spotted a rainbow!
Can you see it? It just made me think how all week I’ve been upset and worried about my job situation and reminded me that after a rainstorm there’s a rainbow, it may sound silly but that rainbow gave me a little bit of hope for the coming months.

Dinner was at Harborside again, once I had their pizza last time I was in love and had to go back for that cracker thin crust.
First I ate Andrew’s Salad which came with the dressing on it even though we asked for it to be on the side, I was going to say something but we didn’t see our waiter for quite a while so I just started picking at it.
Sorry for the dark picture, I wound up just flipping most of the salad over and the lettuce and veggies underneath barely had any dressing, I would say I ate about 1/2.
I also had a roll.
Then my pizza came, it was a lot cheesier then last time but it’s so fresh it tastes delicious!
Andrew got my other favorite from here rigatoni pomadora, and I of course and to have a few tastes.
Well I have a busy day ahead of me, with all the stress this week I let the cleaning of the apartment fall way behind so I need to get that done, then go to the chiropractor, then to the gym. Around 3 my grandparents are coming to visit for the night so I’ll probably be with them for a while since I haven’t seen them in so long! So enjoy your Saturday I hope it’s warm and sunny wherever you are!
