Flip Flops

I was finally able to break out the flip flops today after work!  It was close to 70 and completely sunny, my feet felt to happy to be out of my typical winter Uggs!  It’s really late and I’m really tired so I’m just going to get to it.

For breakfast I had a 5% Plain Fage.  So not worth the 9 grams of fat!  Don’t get me wrong it was good but to be honest I didn’t taste the difference between the 0% to the 5% maybe a little creamier but I’m definitely going to stick with 0%.  I had brought a container of my POM juice and mixed that into the yogurt to give it some flavor.

I used about a quarter of the juice in my yogurt and drank the rest mixed with some water. 

For lunch I grabbed a can of soup this morning quickly, it was once again Progresso which I bought months before I started eating healthier, the stats are good it’s the lengthy ingredient list that gives me doubts.  I’d much rather have a different brand that’s not full of ingredients I can’t pronounce, but I bought them and I’m not going to let them go to waste, so I grabbed a can of Tomato Rotini, it tasted like chef Boyardee which I never liked even as a kid.

On the side I had the last of my Kashi crackers.

Andrew’s mom invited us over for a Corned Beef and cabbage dinner tonight.  I came home after work and made myself a grilled cheese with 2 pieces of double fiber bread, and a string cheese, and of course I had a pickle on the side.

At Andrew’s parent’s house I enjoyed some unpictured salad and some roasted potato pieces.  It was good but I still haven’t told them about the blog so I didn’t snap any pictures.

After that I went to my parents house to pick up my Girl Scout Cookies!!!  I got 2 boxes of tagalongs and as soon as I got home I had to rip open the box and eat 2!  Those little devils are so good!

A New Spin On Leftovers

Whew Monday is over!  Today was a pretty good day, I’m feeling much better today.  I would say I’m 90% back to good health.  My work day flew right before, before I knew it the day was over and it was time to go home.  Tomorrow is not going to be a fun day I’m starting a new project and I pretty much have 2 days to get it all done.  Should make tomorrow go by quickly as well, but it is going to be so hectic!  Hope you all had a fabulous Monday!

Chobani was on sale at Stop and Shop 10 for 10 so of course I stocked up.  I feel like it’s been a while so I grabbed a peach one for breakfast today.  I also restocked my Bear Naked Peak Protein Granola so I was able to have a protein filled breakfast.

You can see my desk was a complete disaster today with all the papers surrounding my breakfast.  My desk is usually super neat but I let all the papers pile up around me today.  Hopefully after this quick project is over my desk will be back to my normal organized work space.

Lunch today I had a serving of Pacific Natural Foods Organic Creamy Tomato soup.  I enjoyed it a lot, but I’ve never been a big fan of tomato soup, I would get this again just for ease, but it’s hardly something I would crave.

On the side I had 15 kashi crackers, but only ate 10 of them.  I put the other 5 back in the box for another day.

After this lunch I was satisfied for a long time but around 3 I got hungry again.  I snacked on 3/4 of a banana with pb sandwiched in the middle.

I love this snack it is so filling and it does an awesome job of fueling a workout or keeping me from snacking all afternoon at work.  It gets the job done for serious. Yes, I just said for serious, it’s something I’ve been made fun of since high school, it’s something I say though I know it’s not good English though.

For dinner tonight I was craving the rest of my taco meat from yesterday.  But for the sake of the blog, I knew tacos again would be so boring so I re-created tacos with a new twist.  Taco Pizza was born!

It was a whole wheat boboli crust, 2.5 ounces of taco meat, 2 tablespoons of salsa, 2 sweet mini peppers diced,  and a little more then an ounce of a low fat mexican blend cheese.  I haven’t used VeggieGirl’s “Holy Yum” on this blog yet, but for real guys, HOLY YUM!

Dare I say this was better then regular tacos.  After I finished eating I thought of one thing that would have made it better.  Shredded lettuce on top once it was out of the oven.  Seriously that would have been out of this world!  Please if you find yourself with taco leftovers, make this pizza, you will NOT regret it!

After dinner I was contemplating going to the gym.  I know I’m probably not going to be able to go tomorrow because I have a doctors appointment and then a dinner date with my friend Michelle.  But it’s cold out there!  So instead I looked on demand and found a yoga sculpt program.  I’ve never really done yoga, I mean sure on the Wii Fit, which totally doesn’t count.  After I set it up and the show started I found out it was level intermediate to advanced.  I didn’t feel like looking for a new one so I did the best I could, I can’t believe how much work it was!  Yoga is something I will totally do again.

I Got It

Well I finally caught the cold that’s been going around the office.  It hit me around 3 today so I’m going to do a really quick post, I’m drinking a hot glass of theraflu and then have some emergen-c that I’m going to drink.  I’m not going to let this cold get me down.

My eats were extremely boring, probably because I didn’t have much of an appetite.

For breakfast I had overnight oats with blueberries, dried crans, and pb.

I didn’t have much of an appetite but felt a little tired so I had 3 of my cappachino coated coffee beans!

I can not describe just how amazing these taste!

For lunch I brought my left over raviloli from V-day dinner, as well as several of the penne Andrew had left over from that dinner as well.

Messy but oh so good, I ate about 3/4’s of this.

Around 3 I got that sicky, achey, tired feeling so I didn’t snack on anything.  Once I got home I had some Wolfgang Puck Organic French Onion Soup.

I put a little less then an ounce of part skim mozzarella on top.  And popped it in the broiler.

Perhaps my tastebuds are screwy from feeling sick but seriously this soup was nasty, it tasted super sweet, like a fake sugary taste and you could totally tell it came out of a can, I ate maybe a 1/4 of this before I chucked it.  Thanks, but no Thanks creepy Wolfgang Puck, keep your french onion soup to yourself.  I just tried to draw a pervy mustache on him but I don’t have the energy to put it into paint and repost it.  Just picture it yourself, funny right?

Since I wasn’t hungry at all I decided to have 1/2 an arnold sandwich thin with pb.

This tasted great and although I wasn’t hungry I’m glad I ate something. 

Well I’m off to bed, sorry for such a crappy post, I’m hoping this Theraflu and emergen-c as well as plenty of rest will knock this cold right out of me.  Although working from home is always an option, I know that I have a lot of work to do that can’t be done from home so I’m planning on going in for at least a little while, if not the whole day.

I hope you are all having a better Monday then me!  Although I’m glad it’s not another sinus head ache at least when it is I know it, and can take some sinus medication, a cold is so hard to shake sometimes.

3 Day Recap

Since I haven’t posted any of my eats since Thursday, I have a lot of recapping to do.  I can’t believe this weekend is over already and another week of work starts tomorrow.  I still have a few things I’d like to accomplish before I go to bed tonight so I’m going to try to do this as quick as possible.

Friday for breakfast I had 2 clementines and a peach Chobani yogurt. Of course it was amazing!

For lunch that day I had an Amy’s burrito, I forgot to take a picture of the wrapper but it was a Cheddar Cheese and bean burrito.  Once again I was not let down by Amy’s.  It was absolutely delicious and I will definitely be buying many more of their meals to try!

After work and before the gym I ate a Clif bar while watching Thursday night’s Office episode.  There’s Michael Scott in the background.

After the gym and before our friends came over I ate a bowl of PB Puffins and blueberries with skim milk.  Delicious combo.

We had a lot of fun with our friends Friday night, and once I again I decided to partake in any drinking and just chugged some water. 

Saturday was a busy day I had laundry to do, I had to pick up a couple more things for my blogger who I got in the exchange for Valentine’s day, ship it out (don’t worry it should be there Tuesday or Wednesday at the latest I shipped it all priority), and go to the chiropractor.  I didn’t have much of an appetite but I planned on going to the gym so I finally forced myself to eat some oatmeal around 12.

I made these at my parents house while doing my laundry and I just didn’t put enough milk in, they were really dry but once I mixed the pb in there it was delicious.  I still can’t believe I’m eating oats!!!

After the gym I still wasn’t hungry.  Something was just off, I was afraid I was getting sick but but my appetite was back in full force today.  For dinner we went to SaladWorks.  I got their Fire-Roasted Fiesta salad without tortilla strips and no dressing.    We brought it back to my parents house while I was still waiting for my laundry to be done.   I put a couple tablespoons of Salsa on the salad once I got to their house.  I also had a whole wheat roll from there.

Like I already said my appetite was back today and I woke up this morning craving an egg sandwich.  I had one “pam” fried egg with 3 pieces of turkey sausage all on a multi-grain roll.

After breakfast we cleaned up around the apartment and then went to the gym.  I had a really great sweaty session again today.  I’m so happy that my workouts have been pretty consistent so far.  And I love seeing the changes to my body.

After the gym I went to my parents house to pick up my camera, but when I got there my dad was washing off their cars so I took the opportunity to clean some of the salt off of Cocoa.   She looks so shiny and happy now.

After my parents house we were heading to Andrew’s parent’s house to visit.  Before we went though we stopped at Panera because I was really craving their Low Fat chicken tortilla soup.  I got a “you pick two” with the classic cafe garden salad, the soup, and a whole wheat baguette.

I used about 1/2 the dressing and ate every morsel of the rest.

After our visit to Andrew’s parent’s house we headed home.  I have been craving pizza since late last night.  I gave in today and made a pizza the same as last time.

It was delicious and I ate this plus the other 2 slices. It was perfect for my craving.  It definitely hit the spot!

Meal Planning Monday

Wow what a busy day!  Work was very busy, and very frustrating.  I hate being blamed for mistakes on things I’ve never worked on.  It was really no big deal but I let it get to me and it stressed me out.  But Monday is over and hopefully the rest of the week won’t be so bad. 

So let’s get into today’s eats.

Breakfast was a 1/2 a WW bagel with pb and an orange.

Delicious and very filling.  I love pb in the morning it does a great job of holding me over.

Lunch was my left over Roasted Red Pepper and Tomato Soup:

Doesn’t food look better in a Tupperware container? Well as an unappealing as it looks it was delicious.

I also had a salad with romaine and spinach and balsamic dressing:

I also had the other 1/2 of my bagel.

Plain this time.

I ate all the soup, the entire bagel, and 1/2 the salad before I got bored.  I talked to my friend for the remainder of lunch which is a tradition.  We call it our “conference calls”  and on my lunch everyday I talk to her.  It’s a nice break to the day.

Later on I ate the rest of the salad and another delicious kiwi.

During my lunch time today while I was eating I planned out my meals for the whole week, according to what was on sale at the store.  It worked out really well.  So once I got home before heading to the gym I made some of the stuff I could prepare ahead of the time for the week.  It was definitely a good invest of time because the rest of the week is going to be easy at meal times.

As soon as I got home I needed something to eat I grabbed a string cheese.

While cooking I spoke to the same friend from my lunch call.  We can talk for hours a day and we usually do.

I did not know what I wanted to eat, and to be honest I had no food in the house.  So since I had the oven on I made a “baked cheese” sandwich.

I used less then an ounce of more cheese (I wish I had known this is what i was going to do for dinner I would have never had the string cheese.)  And 5 pieces of turkey pepperoni on an Arnold Sandwich Thin.  Wrapped it in tinfoil and threw it in  the oven for about 15 minutes.

Here it is right out of the oven and cut in half.  I ate it right off the tinfoil standing at the counter cooking.

After my dinner and phone call I went to the gym.  It was so crowded, and my time on the treadmill was torture today.  I definitely wasn’t able to run like I was yesterday.  But I pushed through and decided to call it quits after the treadmill, no weights for me today.  Oh well, tomorrow will be better I know it!

After the gym I went over to the grocery store and did a big shopping order.  I know I haven’t taken pictures of my groceries since the first time, but I was going to the store a few times a week instead of one big shopping trip.  I’m hoping with the meals already planned out I can avoid the grocery store until next week.

Here is most of the things I got, except for a few that were specifically for Andrew, toothpaste, etc.  Let’s see how many things I forget to list.

  • Arnold Sandwich Thins
  • And Biotin 

Biotin is a supplement I take (in addition to my multivitamin).  After my car accident back in July I got stressed out, I was terrified to drive, super anxious being in a car, and had no idea whether my car would be declared totaled (it was after a month), or if they would find any witnesses to prove that the other woman had ran the red light, because we both claimed we had the right of way.  I also was having nightmares reliving the whole experience.  People that came out of their houses after the accident told Andrew that they were certain that somebody had died by the incredible noise of the crash.  I let the stress eat away at me and after a while I realized I was losing my hair.  All from the stress!  The dermatologist recomennded that I take 3 of these tablets each night.  Here’s a little more information about Biotin:

Biotin is necessary for cell growth, the production of fatty acids, and the metabolism of fats and amino acids. It plays a role in the Citric acid cycle, which is the process by which biochemical energy is generated during aerobic respiration. Biotin not only assists in various metabolic reactions, but also helps to transfer carbon dioxide. Biotin is also helpful in maintaining a steady blood sugar level. Biotin is often recommended for strengthening hair and nails. Consequently, it is found in many cosmetic and health products for the hair and skin.

In addition to my hair growing back, it’s thicker and my nails grow so fast and are super strong now too.  The biotin was buy one get one free at the store so I stocked up.

Happy Humpday

I had my second attempt with acupuncture today, I have decided I’m not going to continue with the treatments anymore.  Although I didn’t pass out this time, it’s just not comfortable for me.  I got an awful pain in my left hand as soon as the needle went in, it didn’t get any better, and so the doctor removed it, shortly after he left the room my right hand started hurting, and now it’s bruising.  I just think for me it’s not worth it at this time.  If I can transfer my treatment to another doctor I will certainly be willing to try again.  I already go to the chiropractor 2x a week, now 3x for acupunctre, that would mean 5 days out of the week I’d be at the doctor’s office and I just feel that’s too much time for me right now.  I didn’t get home until after 6 today and felt rushed the rest of the night to get everything I needed to get done.   I never made it to the gym, and I don’t need anymore excuses to not be there so for now I’m going to stop treatment.  But thanks again for all the advice.

Let’s move onto today’s meals!

Breakfast

I had an Arnold Sandwich thin with Cinnamon Raisin swirl pb (about a tbsp to a tbsp and a half) and an orange.  I love oranges but I already miss my clemetines.

This held me over until lunch, I would hate to give up my daily breakfast of chobani but seriously pb holds me over so well.

Lunch was 2 servings of vegetable beef soup.  It was a  light Progresso soup, but with all the additives it was a last minute desicion. Although it was good it’s something I’m going to try to stear clear of.  There’s so many other soups out there that are all natural it’s silly to settle for something full of chemicals.

With that I also had half a green pepper sliced up, and another 15 kashi crackers.

Decent lunch and held me over for a couple hours but by 3:15ish  I grabbed a honeycrisp apple.

I can’t get enough of these apples!  It was the only one I found on our last shopping trip and I’m sad to see it go, but it was absolutely delicious!

After acupuncture I couldn’t figure out what I wanted.  But I kept thinking back to the pizza I made last week.  I was going to make a Flat Out pizza, but found a small container of fat free ricotta in the fridge and decided to make a Flat Out Calzone!  I could eat this every day of the week, but don’t worry I won’t be.

I used:

  • 1/4 cup ricotta cheese
  • 1.5 ounces mozzarella
  • 1 ounce thin sliced green peppers
  • a small amount of onion
  • garlic powder
  • and 8 pieces of turkey pepperoni

I placed it all on 1/2 a flat out wrap

Fold the Flat out in half so that it creates a 1/2 moon shape, seal the edges by pushing the tines of a fork all along them, and cut a couple slits in the top to let steam escape.  Put it in the oven ( I used a toaster oven) for about 15 minutes at 400 degrees.

So cheesy, and I swear if you’re used to using part skim or whole milk ricotta, you won’t be able to taste the difference.   I might use a little less ricotta though next time because this was pretty heavy.

After dinner we had to go pick up Andrew’s car, he got the new tires, and tomorrow for our commute he’ll be driving, perfect timing because we’re supposed to get some snow, and I’m a terrible driver in the snow, I just get way to nervous.  Before we left to go get his car I had a hot chocolate.

You can see in the upper left corner there’s extra magnets, it was a smiley face orginally but someone gave it this face, and I kinda like it.  It’s definitely the tamest modifcation to it that anyone’s done.
