Last Time…
This is the last Thursday night where I will have work the next day for the next 24 weeks. Sounds kind of nuts huh? With almost everything figured out I’m feeling much more upbeat and plan on spending a lot of time enjoying my Fridays during the summer. 2 of my friends don’t work on Fridays so we’re already planning some beach Fridays!
For breakfast this morning I had my usual Chobani (peach flavored today) with some granola. Maybe this picture will make it a little less boring since I’ve eaten this breakfast everyday this week.
My boss is on vacation both today and tomorrow so I was fielding a lot of questions that would usually go to her it was a busy and draining morning so about 1/2 way through I had a gigantic orange for some energy.
This orange was super juicy, just looking at this picture is making me want another one, unfortunately I think this was my last one.
For lunch today I brought a GIGANTIC salad in. This salad contained:
- romaine
- spinach
- 3 meatless meatballs
- carrots
- mexican cheese blend
- and Salsa
I didn’t finish all of this salad it was just too big. But it certainly was delicious!
When I came home there was a package waiting for me!
You’ve probably seen these floating around on the blogs and I was so excited to give these a try.
I got 9 bags of chips to sample.
I wasn’t very hungry yet but I decided to snack on a bag of these before dinner. I choose the sea salt & vinegar to try first.
Excuse my nasty nails they need to be redone so badly!
These chips are really delicious, they are not like normal potato chips the texture was more like a rice cake. The flavor was really good though and I can’t wait to try the others.
Finally I got hungry for a meal so for dinner I had brinner once again.
I had a mozzarella and spinach omelet.
On the side I also had a butter piece of double fiber toast.

This dinner definitely hit the spot!
Well I’m off to read and go to sleep, after such a busy day I am definitely exhausted!

Happy St. Patrick’s Day!
I hope you all had a fun St. Patrick’s day! I completely forgot to wear green today, but luckily nobody pinched me! I had a pretty busy day at work which made the day fly by. I’m happy tomorrow is Wednesday because I’m pretty excited about the weekend and can’t wait for it to get here. 3 more days!
For breakfast today I enjoyed a Fage 2% with honey, I’m not the biggest honey fan, so I used less then a 1/4 of what was given to me. But I did mix my usual granola in there.
Around 11 someone at work offered me some Sunchips, apparently someone must have tried to purchase it from the vending machine but it got stuck so when she went to buy them she got 2 bags. I haven’t had Sunchips in probably a year, so I was not about to turn down a free bag.
For lunch I had an old favorite, peanut butter and raspberry preserves on Arnolds Double Fiber bread.
For dinner I didn’t know what I wanted, I had bought some irish soda bread while food shopping over the weekend so I knew that needed to be a part of my meal tonight. While I was deciding I decided to snack on something green outside in the sunshine. It was of course another one of my favorite pickles.
I got a couple questions about what kind of pickles they are. First off these are by far the freshest pickles in the world. They are Ba-Tampte Half Sour Pickles, but the website doesn’t give much information. I know they are from New York and I also know it’s not always common to find them so bright green they do start to look more pickle-y after a few days (but they typically don’t last long in my house) it’s like biting into a fresh cucumber. I wish I could invite all you pickle lovers to my house and let you sample them. Last summer I went through so many jars, and always offered them to my friends, everyone has agreed these are the best pickles ever. When they are this fresh they don’t taste sour or even half sour at all, that flavor comes on once the pickles sit around for a few days. I do know they have no preservatives and have only all natural ingredients. The sodium content is high but no higher then other pickles on the market as far as I can tell. They are in the refrigerated section of the store, hope that will help some of you find it!
Finally I decided to have “green” eggs, roasted potatoes, and my irish soda bread serving as the toast. I figured potatoes and anything green would make it in an Irish meal. I’ve never liked corned beef so even though I couldn’t have had it since I gave up meat for Lent, I really wasn’t missing it at all.
Scrambled eggs with a handful of spinach.

Delicious dinner.
Andrew didn’t go into his second job today because his allergies are driving him nuts so together we watched some TV and I snacked on a little more then a serving on Fro yo (that I never wound up having last night) with some chocolate chips and less that a tablespoon of pb. Such a great combo!
Well I’m off to read and go to bed. Hope you all had a fun night, and I hope some of you enjoyed some green beers for me!
Brinner and a Popcorn Picnic
I can not wait for my dad to come fix the computer, it’s a lot of trouble getting my pictures onto Andrew’s laptop. Andrew was up until after 1 last night trying to install some new updates hoping it would run better. Today it went so much faster, and I’m able to post the rest of my eats from yesterday.
We decided yesterday afternoon that Brinner (breakfast for dinner) is exactly what we wanted. I love Brinner, and we haven’t done it in a while.
My plate included two pieces of Arnold’s Double Protein bread, toasted with light butter. And an omelet made with egg beaters. Inside the omelet is 4 pieces of turkey pepperoni diced, and some part skim mozzarella cheese. It was really good. Like pizza in an omelet.
After dinner Andrew and I were trying to decide what to do, we wanted to go to the movies but the little movie theatre that’s in walking distance wasn’t playing anything we were interested in seeing. We decided to do the next best thing, make some popcorn and watch a movie at home.
A friend got me a stovetop popcorn popper for Christmas, it’s a lot of fun to use.

It came with these cute movie style popcorn container so we filled those up and watched Get Smart. What a funny movie I didn’t expect it to be so funny but it really was. I love Steve Carell!

This popcorn was 100 x better then microwave popcorn, if you have a chance to pop your own I recommend it.
