Happy Valentines Day!!

I hope you are all having a great Valentine’s day no matter what you are doing!

We had a busy day planned so I had a quick breakfast of PB puffins and a banana in skim milk.Picture 016

After driving my sister home we went to the chiropractor, then went back to my parents house to watch “You Are What You Eat.”  It’s one of my favorite shows but it’s a British show so it’s only on the BBC America channel and we don’t get that at our apartment.  If you do have BBC America you should check it out, I know it’s on every Saturday at noon but it might be on through out the week.

After watching that we went to the dress place so I could get measured and put down a deposit for my bridesmaid dress for my cousin’s wedding.  I’m so excited to get it.  It’s a gorgeous dress,  I’ll be sure to post pictures of it once I get it.

Once we were done there we headed to the gym.  My right knee started bothering me yesterday so I took it easy and mostly walked on the treadmill today with a little jogging.  I’m trying to prevent any injuries, I think I might have to look into knee sleeves, or something for my knee.

After the gym we were decided to try a kinda new place nearby for lunch called Tropical Smoothie Cafe.

I got a “Veggie Veggie” which was southwestern rice, corn, black beans, asparagus, romaine lettuce, tomatoes, onions, parmesan cheese, balsamic vinaigrette in a garlic herb tortilla.  It was really good, I just wish they had whole wheat wraps.

Andrew got a Jamaican Jerk Chicken wrap which I tasted it was really good, spicey, but delicious.

After lunch we came back to the apartment and took a long nap.  I can’t remember the last time I napped, it was glorious!  Definitely needed that.

For our Valentines dinner we went to favorite restaurant, Yesterdays, I have come here dozens of times growing up.  Pretty much every birthday I’ve come to this restaurant and I’ve only gotten one thing to eat.  Chicken parmigiana, as I said yesterday this is my favorite meal!  And at Yesterdays it’s amazing!  I’m glad we had the chicken parm last night because it made me want it less, but the craving was still there.  I started at the salad bar, that tri color pasta salad is so delicious!

I decided to try their homemade ravioli for my entree.  I’m glad I did it was delicious, you can’t beat fresh pasta.

There were 6 altogether but I ate 3 of them and brought the other 3 home for lunch sometime this week.

I also had 2 fresh rolls.  They are really small but they were still hot so I had to indulge in a couple.Picture 030

It was a really great dinner, and I was happy to actually try something new.  But on my 24th birthday next month you better believe I’m getting that chicken parm.  I don’t know if I could not eat it on my birthday. 

After we came home from dinner I had 2 of my cappachino coated coffee beans from Ellie!

Oh my gosh these were outta control delicious!  It was hard to stop at just 2, but I’m going to do my best to make these last.  Thank you so much Ellie!!  Andrew tried one and loved it as well, I’m going to have to hide this bag from myself before I eat the whole thing tonight!

Well I’m off to lay down and watch “Burn After Reading”  I hope you all had a lovely Valentines Day!

Hump Day in the Hospital

Happy Wednesday, the weeks more then 1/2 over.  Thank God it’s been one thing after another all week and I’ll be happy when it’s over.   I want to thank everyone who commented yesterday with ideas on how to combat those days where you are just feel hungry alllllll day.  Thanks for the tips!

I woke up this morning to a blanket of snow, Andrew had a snow day from school, I was so jealous, but they didn’t wind up plowing our road until almost 9.  I asked Andrew to drive me in because I’m a complete baby when it comes to driving in the snow.   So I got to work after 10.

Before I left I had a great breakfast of Fage 0% and blueberries.

Delicious combo, I haven’t had blueberries in so long it was a welcome change of pace.

For lunch I had another toasted ww bagel with peanut butter.

I ate about 1/2 of this when I got a text from my mom that said Andrew was coming to pick up her and my sister up to take my sister, Kristin, to the ER.  I couldn’t eat anymore I was so worried.  Kristin had been complaining she didn’t feel good last night and then this morning she fainted.  My mom was really concerned because my sister has only fainted one other time, she hadn’t been hungry, she had a terrible cough, and she didn’t seem right once she came to after passing out.  I felt so bad knowing my little sister was at the hospital and since Andrew was taking her I had no way to get there.  I felt helpless.  Luckily once my boss came back from lunch I explained to her that I was going to be leaving as soon as Andrew could come to get me.  She offered to drive me to the hospital so I wouldn’t chew all my nails off waiting to find out what was going on.

I know Kristin  hates hospitals, and I was worried it was pneumonia or something worse and she’d have to stay awhile.  But luckily once my boss dropped me off they were already running tests on her and it turned out she just had the flu.  I was so thankful, that it wasn’t anything too serious.  I was happy I had gotten there in time for her to get her blood work so I was able to be there to hold her hand.  She’s home now after the felt she was hydrated enough from the IV.  

Once we were able to leave we went back to my parents house to change into our gym clothes.  While I was there I ate the gala apple you see in the background from my lunch.

The gym was pretty much just okay today.  Not my best day but not my worst.  I was so hungry at this point I think my body needed some serious fuel and that apple just wasn’t enough.

Once we got back to the apartment we made something fast and easy.  Chicken Quesadillas.  (Pronounced like the grandma from Napoleon Dynamite does “Make yourself a dang ques-a-dilla!”)

Mine included mexican blend cheese, 4 ounces of chicken, peppers and onions.  With some salsa for dipping.

It definitely hit the spot after such a long day. I’m so ready for bed, sorry I didn’t get to comment any of your lovely blogs today, I’ll try to do some catching up now but then it’s bed time for serious.

Constant Chill

I have been cold since I got out of bed this morning.  No amount of hot food or liquid could warm me up. I’m looking forward to posting this and then getting into bed.  I hope you all were able to stay warm today!

Breakfast was the same old, same old.  A vanilla Chobani, with peak protein granola, and dried cranberries.  It’s such a good combo I can’t get enough.

Along with my yogurt I had 2 prunes.

That sweater you see is my big emergency work sweater, when I’m really cold it’s big enough to fit over no matter what I’m wearing.  Even that sweater couldn’t warm me up today.

Around 10:30 I got super hungry, and my planned orange was not going to hold me over until lunch so I had 15 Kashi crackers.

That did a good job of filling me up until lunch time.  I was super excited about my lunch because I had packed a pb and banana sandwich on an Arnold Sandwich Thin.

This was the first time I had ever had a pb and banana sandwich, I’ve put pb on bananas though and loved it, so it’s no surprise this was a really great combo.

I also brought a kiwi!

I have not had a kiwi in such a long time, this was delicious warm weather treat, it made me wish for summer and warmer weather so badly!!

Around 3:30 I had 1/2 a green pepper all cut up.

After work I had plans to go to the gym, but tomorrow is my first session of personal training so I decided to take it easy with Andrew tonight before all hell breaks loose tomorrow.  I’m really excited but also really nervous about the training.  I can’t wait to see how it goes.

So for dinner we decided to make our favorite dinner of tacos but with a twist.  We picked up a rotisserie chicken on the way home from work and took all the white meat off, removed the skin, and shredded the meat. We found a seasoning mix with the least amount of sodium and all natural ingredients and used that to create our first batch of chicken tacos.

I put mine on a flat out wrap with lots of lettuce, onions, brown rice, 3 ounces of chicken, salsa, and about 1/2 an ounce of Mexican cheese blend.

I wound up overloading on the lettuce and had to take some off and I ate that on the side.

This was really good!  I thought it was almost as good if not better as when we make it with the extra lean ground beef.  I feel like the chicken just carried the flavor so much better.

This was a delicious meal!

Leftover Stir-fry

What a long day!  Did anyone else have trouble getting up this morning?!  Mondays are always hard, but the first Monday after a long break is next to impossible.   

So I packed all my food up last night to bring with me for the day.  I knew I wasn’t going to have time this morning to get everything ready.  Thank god I did this because I wound up having to drive Andrew to work as well.  The tire on his car still hasn’t been fixed.   He works 2 jobs, one at a special education school which is right around the block from where I work, and at a pharmacy a couple days a week.  (I shouldn’t be complaining about a long day!)  He’s at work at the pharmacy now, and I’ll be leaving in a few to hang out at my parents (which is right around the block from his pharmacy) until he gets out at 9. 

My breakfast this morning was delish.  It was another vanilla chobani, with bear naked pure protein granola (my favorite of the ones I’ve tried), and a few pb puffins.  Alongside that I had my morning coffee and a clementine.

I didn’t really need them but oh well better then running to the vending machine.

For lunch Andrew made me a flat out multigrain wrap with pb and raspberry preserves.  Whatta guy right?

Weird combo I know, but a few years ago I was a nanny and one of the girls loved this.  I gave it a try and have loved it ever since!  If you’ve never had it like this (and I’m assuming not many people have) try it one day.  You’ll thank me.

Around 3:30 I was hungry again so I had another honeycrisp apple.  I still can’t believe how unbelievably good they are!

After work I rushed to my acupuncture appointment.  I was so nervous, but it turns out I was nervous for no reason.  I just did a consulation with the doctor today and have to go back next Monday to actually get it done.  So now I have another whole week to be nervous!  On my way home from that I was thinking about what I wanted for dinner.  Something fast and easy.  So with all the leftovers in the fridge I made “Leftover Stir-fry.”

It had:

  • broccoli (from last night)
  • ww pasta (from last night
  • roast beef from New Years day
  • a green pepper I had lying around
  • garlic
  • extra virgin olive oil.

This was exactly what I needed, quick easy, and delicious.  This might become a weekly thing.  Well not this exact mix but a leftover stirfry is something I could definitely get used to.  And now I have leftovers of this for another night this week.

Well I’m off to clean up from dinner and then head over to the parents house.  Hope everyone’s Monday went well!  See you tomorrow food bloggers!
